Tortilla Roll-ups

The first thing to be devoured at our family-style New Year’s Eve party were these tasty tortilla roll-ups.  Awesome as an appetizer, it is easy to tweak the ingredients to suit your preferences, use what you have on hand, or to make them more filling for a meal.

One of my favorite things about tortilla roll-ups is that they are best made ahead of time, decreasing last-minute party preparations.

Tortilla Roll-ups

  • 8 oz. sour cream
  • 8 oz. cream cheese
  • 4 oz. can chopped green chilies, drained
  • 4 oz. can chopped black olives, drained
  • 1 c. shredded cheddar cheese
  • 2 oz. package dried beef, finely chopped
  • 1/4 cup finely chopped green onions
  • garlic powder to taste
  • 10-12 flour tortillas
  • salsa

1.  Mix first eight ingredients together.  Spread mixture on tortillas.

2. Roll each tortilla and wrap individually in plastic wrap. Refrigerate at least several hours, or even for a day or two.

3. Before serving, unwrap and slice. Serve with salsa.

With the Superbowl rapidly approaching, I’m trying to get my head in the game and come up with our menu. These will certainly make the cut, along with my layered shrimp spread and a few other fun foods.  A visit here is sure to inspire some ideas, too.

I could eat a mountain of these things. I like the your recipe. It’s a little different than mine so I’ll be trying this variation next time for sure!

We love these roll ups and make them for most parties. I do variations of these. I love all the goodness that you put in yours. I usually just do the green chiles. I will be making your version, next time.

This looks so yummo! Another idea is to make bite-size biscuits with cheese, jams, fruits, chocolates, etc in the middle! Dust the tops with cinnamon/sugar, powdered sugar, etc for a pastry like treat!

I love these tortilla wraps. I make similar but without the dried beef in it. As for SuperBowl I have too many little appies to list but I am definitely making cream cheese stuffed jalapenos with bacon. Come by and check out the appetizer category.

I have never made these myself but I did pick up several packages of lavash on clearance today!

Now I know what to do with them!

i’m the chili cheese dip queen. :) all that you need is a crock-pot, 1 box of velveeta, a can of chili, and tortilla chips.

Embarassing question….when you say “package of dried beef”, are you referring to beef jerky? I’m gonna try these (maybe hide ‘em just for me too). How long do they keep or is it an “eat right away” food?

@Jackie, I haven’t. I don’t think the texture would hold up well if they were frozen, though. They do keep well in the fridge for many days, if that helps.

Oh, and I totally had the same question as Laura above – where do you find packages of dried beef??? I ended up with a couple of Slim Jims!

I get my dried beef in the packaged meats, right by the pepperoni.
