Tangy Key Lime Bites

Is there anything better than citrus to awaken the tastebuds?  These Tangy Key Lime Bites are basically the same recipe as the Lemon Bars we enjoy so much, so feel free to switch and swap as you wish!  They freeze beautifully, and are bite-sized perfection for a spring tea, bridal shower, or baby shower brunch.  Besides, aren’t key limes about the cutest little fruit ever?

*** I have much better luck juicing the limes if I roll them around the counter (using lots of pressure) for a bit before slicing to juice.  With my “leftovers” I plan to make a quick batch of Strawberry Limeade Slushes.

What’s your favorite citrus flavor?  I like them all!  (Except grapefruit… not a fan.)

    YUM! I know you probably don’t consider yourself a food photographer, but I just love your little presentation there. Lilacs are one of my favorites and they look so pretty there!

  2. YUM! Those look really good. I love anything lemon or lime!

  3. A little tip: put your limes in the microwave and warm them for about 15 seconds. Give them a little roll on the counter with a little pressure and the juice will come pouring right out when you cut them. I recommend making a slight puncture while holding the lime over your bowl. I make key lime pie about once a month, but I think I’ll try these bars next. Thanks for the recipe!

  5. I made key lime bars this weekend and they are delicious. Love the flavor! And strawberry/lime slushies is a great way to use up the lone lime I have left.
