My hubby cannot get enough of these! More flavorful than the generic cream cheese-filled equivalent, this appetizer comes together easily and packs a punch.

Stuffed Jalapeno Appetizers
- 12 fresh jalapenos
- 4 oz. cream cheese, softened
- 1 T. dry ranch dressing mix
- 1/2 cup shredded cheese (I like Colby Jack)
- 6 slices bacon
Slice the tops off of the jalapenos. Slice them in half and dig the seeds and membrane out. Wear plastic gloves for this and keep your hands away from your face!
Mix cream cheese, ranch dressing and shredded cheese. Stuff into each jalapeno.
Slice bacon both length and width-wise. I like to use my kitchen scissors for this. Much easier than a knife. Wrap each bacon strip around a stuffed jalapeno and secure with a toothpick.
Bake at 400° for 30 minutes, or until bacon is crispy. (Can finish off under the broiler, too. Just keep an eye on it!)
Serve warm. Makes 2 dozen.

Just wanted to tell you thanks for the recipe! I made these for Father’s day last weekend and my husband was in hog heaven. Next time I will BUY GLOVES! I have de-seeded jalapenos a million times with no problem, but never a dozen at once. My fingers are still a little tender 3 days later.
I once seeded them and then rubbed my eye… BIG MISTAKE!

We made these this past weekend. They were oh so good!!! Everyone loved them.
Not sure how to keep the cheese stuffing from oozing out on the cookie sheet. I suppose I used too much filling. My peppers were pretty big so I didn’t think I would have that problem. Also, our bacon just wasn’t cooking fast enough for us. So, after 30 minutes in the oven, we got adventurous and put them under the broiler for just a few minutes. What a difference!
The broiler is a great idea. My broiler element has been out for a long time now, so I’ve kind of made do and forgotten about it. Would be perfect for this, though!
I laugh when I see recipes like this for Father’s Day. Hot peppers, rare steak, chocolate, ice cream… sounds like an ideal Mother’s Day menu to me. LOL Thanks for sharing. These look fabulous!
