My hubby cannot get enough of these! More flavorful than the generic cream cheese-filled equivalent, this appetizer comes together easily and packs a punch.
- 12 fresh jalapeños
- 4 ounces cream cheese, softened
- 1 tablespoon dry ranch dressing mix
- ½ cup shredded cheese (colby jack or a sharper cheddar work well)
- 12 slices bacon
Slice the tops off of the jalapenos. Slice them in half and dig the seeds and membrane out. Wear plastic gloves for this and keep your hands away from your face!
Mix cream cheese, ranch dressing and shredded cheese. Stuff into each jalapeno half. Cut bacon in half. Wrap each half bacon strip around a stuffed jalapeño and secure with a toothpick.
Bake at 400° for 30 minutes, or until bacon is crispy. Finish them off under a broiler, but keep an eye on them!
Serve warm. Makes 2 dozen.
