Gotta love a little friendly competition… and an excuse to create a yummy dessert!
I’m teaming up with Rice Krispies, TheMotherhood.com, and 9 other bloggers for some spring-time cooking fun. Our mission? Create a unique, tasty recipe to fit this theme: Easter’s more fun with moms’ Rice Krispies Treats recipes.
My hubby, a dessert-eating expert, helped me come up with this Strawberry Rice Krispies Pie. It’s a fun combination of chewy marshmallow, crunchy chocolate, and creamy strawberry. What do you think?
Strawberry Rice Krispies Pie
Layer 1: Press about 2/3 of a batch of Rice Krispies Treats into a well-buttered pie plate. (Go ahead, eat the rest.)

Layer 2: Melt 1 cup semi-sweet chocolate chips. Spread over bottom and sides of Rice Krispies crust. (Very important to completely cover, so the crust doesn’t get soggy!)

Layer 3:
Strawberry Glaze
- 1/2 c. sugar
- 1/2 c. water
- 1/8 tsp. salt
- 2 Tbsp. cornstarch dissolved in 2 Tbsp. water
- 1 Tbsp. strawberry gelatin powder
- drop of red food coloring (optional)
Mix all together in a saucepan. Heat until boiling and thickened. Cool completely.
Cream Filling
- 4 oz. cream cheese
- 1/2 c. sugar
- 12 oz. whipped cream
Beat together until fluffy. Mix with cooled glaze. Add 1 pound fresh, sliced strawberries. Pour onto chocolate. Chill (a few hours) until serving.

Garnish with fresh strawberries or melted chocolate chips.

** Word of warning – this pie is tricky to cut since the chocolate gets hard, but it’s worth it! Perfect combination of flavors and textures.

You’ve had your share of moving, I think. Hopefully you can be settled for a long while!
This looks delicious. You mentioned that the tricky cutting, due to the hard chocolate. How about making more of a ganache, by melting butter or margarine w/ the chocolate over a double boiler? It might be easier to cut and would be texturally delightful.
Also, I make peanut butter rice krispy treats, by melting 1c. peanut butter, 1c. karo syrup, and one cup of sugar, then adding 6 cups of Rice Krispies. How about using that as a crust, fill with chocolate ganache, and forget about the strawberry filling altogether? Wow, that would be decadent!
