Spicy Tomato Bread

Yes, you read that right.  Spicy Tomato BreadI am not even kidding.

I’d never heard of such a thing when Red Gold Tomatoes asked me to review their product and try out one of their recipes.  Being the curious-minded cook that I am, though, and having all of the supplies in my pantry, I mustered up some courage and threw the odd combination of ingredients together.

Pretty.  Check.

Fragrant.  Check.

Moist.  Check.

Tasty…. (surprisingly), Check!

Spicy Tomato Bread

From Heartwarming Recipes for the Busy Cook (A Red Gold Cookbook)

  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 1/3 c. cooking oil
  • 2 eggs
  • 1 (15-ounce) can Red Gold Crushed Tomatoes (I used petite diced tomatoes because that’s what they sent me.)
  • 1 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp each allspice, nutmeg, and ground cloves (or 1 1/2 tsp. pumpkin pie spice)
  • 1/4 tsp. salt
  • 1/2 cup sliced almonds (toasted)
  • Cool in the pan for 10 minutes.  Remove to a wire rack to cool completely before slicing.
  1. Mix sugars, oil, and eggs.  Add tomatoes (undrained).  Stir well.
  2. Combine dry ingredients in another bowl.  Add to the tomato mixture.  Mix well.  Batter will be thin.
  3. Pour batter into a greased loaf pan.  Sprinkle with the almonds.  Bake at 350° for 45 minutes or until the center is done.  (I had to bake it almost an hour.)

    My mom used to make Tomato Soup Cake, but I’ve never heard of using diced tomatoes in a quick bread recipe.

    And interestingly enough, I made a tomato bread just last week. It was the first time I’d ever made anything like that. I think I need to tweak the recipe a bit, but it was good. It had more of a biscuit base, but was baked in loaf pans.

    Homemade tomato basil soup — equal parts chicken broth and tomato sauce with diced onion, garlic, and fresh basil.
    Or just whole tomatoes with a sliced onion, green pepper, garlic and topped with parmesan cheese baked in the oven until it almost carmelizes — yummy.

    My favorite way to eat tomatoes is in salsa (in fact, we just had some with dinner tonight!) I use a can of mexican stewed tomatoes, garlic, jalepenos and lime juice and pulse together in blender – yum!

    my favorite way to use tomatoes is in bruschettas. Toast french broads with EVOO & garlic on it. Then when it’s done put a mix of tomatoes, basil, balsamic vinegar. Top of w/ salt and pepper, yum.

    Plain. I eat a sliced tomato almost every day of the year. I have gotten to where they just aren’t good enough in the winter to have them every day, but at least a few times a week. I can’t get enough tomatoes.

    Lately my favorite way to eat tomatoes is in Pasta e Fagoli soup that I make in the crock pot. But in the summer time it is frest tomatoes all the way, or in a BLT.. Mmmm!!!

    Best way to eat a GOOD tomato (fresh from the garden, not the grocery store) is to slice it and sprinkle it with a little salt! I use grocery store tomatoes for soup since I always feel a little sad when they’re not as good fresh *L*

    I LOVE using canned tomatoes and making my own pizza sauce! Simmer them on the stove and if not already crushed use an immersion blender. Add onion, garlic, and spices – yummy!

      Huh — I never thought of it that way! I was shocked that there was no “tomato” taste in the bread. Just moist, yummy spices. That makes sense, though!

    There is nothing better than a fresh, homegrown tomato, still warm from the sun, sliced and served with a little sprinkle of salt. The only thing that compares is a blt on wheat toast with miracle whip, with homegrown tomatoes, of course!

    I live in Red Gold country. As a matter of fact, our last house was right across the street from one of their factories. But…I can’t say I’ve ever made tomato bread. I do love all things tomato, though.     What an interesting bread! I have made tomato soup bread, which has similar ingredients. It ranks right up there with carrot cake and spice cake! Yummy! I have also seen green tomato preserves that you add raspberry jello to so tomatoes must be a pretty versatile vege!

    My FAVORITE way to eat tomatoes would be in spaghetti sauce. We use crushed tomatoes for our sauce. But I love whole canned tomatoes in my chili! I LOVE TOMATOES and can always find great ways to eat them often!

      I do like it. It sounds super crazy, I know, but the “spice” is so much like pumpkin bread and it is very moist. Not sure that it’ll make our “regulars” list, but it is good.

  97. I love cherry or grape tomatoes for eating raw. Larger tomatoes I like in kind a weird way–chopped up, with chopped dill pickles, pimento cheese, and ranch dressing.

    Cooked tomatoes I like to blend and use in chili, taco soup, or spaghetti sauce.

  99. I LOVE tomatoes! It would be hard to pick my favorite way. I think it depends on season. In summer, a slice with mayo and salt. In Fall, roasted with garlic and olive oil or butter, in winter, sauce and soup, spring salsa. Last night I made creamy tomato soup with Israeli Couscous in the crock and it was amazing.

    I have made tomato bread before, a yeast bread and it was delicious, especially with grilled cheese.

    My favorite way to eat tomatoes is just plain old tomato sandwiches in the heat of summer. But my second favorite is to saute some garlic in olive oil, add sliced zucchini and pepper flakes, and saute a few minutes, add diced tomatoes and a pound of bay scallops and simmer until hot. Then you can eat that plain or mix with some cooked pasta. YUM!

    Oh my how do I pick away. I love to eat roma’s in salads, love them in salsa and chips and probably my favorite is in tomato sauce on my homemade pizza we have every Sunday night. Sunday night is pizza and movie night at our house, an easy supper before the rush of the new work week begins.

    Seriously, I could eat tomatoes every day of the year. But like you, I only eat fresh ones when they are actually in season and taste like tomatoes. The whole ‘red tomato like-cardboard tasting thing’ does nothing for me.

    Nothing is worse than non-producing tomato plants and I sure had them this year!

    That said, I used canned in just about everything…Italian, Mexican, American and all kinds of cooking! YUMMY, alhtough I cannot say that I’ve ever had them in a quick bread!

    I’ve heard people call basic tomato sauce (for pasta) tomato gravy. I don’t know why, but that is what I assume it is.

    Hmmm. Nothing as exotic as tomato bread! :) We use a lot of tomatoes in stew, soups, spaghetti sauce. . . Tonight I used them by browning pork steaks and then cooking them with green peppers, onions, tomatoes, and spices and serving them over brown rice.
