Slow Cooker Italian Chicken Meal

Italian Chicken

How about prepping supper in under 5 minutes?  Love it!  This recipe is adapted from one I found in the Once-A-Month Cooking Family Favorites book.  I was afraid that my kids would turn up their noses, but they barely left enough for Daddy to eat!

Slow Cooker Italian Chicken Meal

  • 4 chicken breasts (bone-in or boneless — up to you)
  • seasoned salt
  • 1 cup Italian salad dressing
  • 1 cup chopped green bell peppers
  • 1 cup chopped onions
  • 1 1/2 tsp. chopped garlic
  • 4 potatoes, peeled and cut in wedges
  • 2 cans green beans

Season chicken breasts with salt; place in the bottom of the slow cooker.  Add onion, peppers, garlic, and potatoes.  Pour Italian dressing over the top.  Cook on low for 7 to 8 hours.  Drain one can of beans.  Add beans (both cans) to the mix.  Heat through.

I make Italian Chicken all the time, but have never done it in the slow cooker. I’ll have to try this one.

Yum! This is pretty close to my Monterey Chicken. I think we’ll try it next time with the Italian dressing instead of the garlic pepper and chicken broth that I usually use.

I love my CrockPot…have I said that before?? I don’t do much chicken in it anymore but I do lots of soup and an occasional roast. When I do make chicken in the CrockPot, I like to use bone-in without the skin because it seems to stay moister.

It’s so neat that your kids love good, healthy food. :)

In the crock pot as I type! Though I used frozen green beans and threw them on top, and I’m cooking on high so we can eat it for lunch. Can’t wait! (Used potatoes, onions, and green pepper from the garden. Could’ve used green beans, too, but I has some store bought in the freezer.)

I don’t know how I missed this before. Italian dressing is a new like of mine. It does give chicken an excellent flavor. This may make next month’s menu.
