Savory Mini Quiche

A hit at my sister’s baby shower (see the full menu here), these yummy quiches come together easily and can be made ahead of time.  Simply reheat in the oven before serving.

Savory Mini Quiche


  • 1 cup butter, softened
  • 6 oz. cream cheese, softened
  • 2 cups flour

Mix together, divide and roll into 48 balls. Refrigerate balls 1 hour. Press into mini muffin pans with a mini-tart shaper.


  • ½ pound pork sausage
  • 3 strips cooked bacon, crumbled
  • 2 T. finely chopped onion
  • 2 T. fresh chopped chives
  • 4 eggs, lightly beaten
  • 1 cup cottage cheese
  • 1 cup cheddar cheese
  • 1 cup mozzarella cheese
  • 1/3 cup grated parmesan cheese

Brown sausage and onion.  Stir in chives and bacon.  Fill each muffin cup with about 1/2 tsp.  sausage mixture. Combine eggs and cheeses.  Spoon over sausage mixture. Bake at 375° for 20-25 minutes.  Cool for 5 minutes before removing from pans to wire racks.  Serve warm.

    • Yes! Yes, bake them before you freeze them. Then thaw when you need them, and rewarm at about 300°. You should be able to keep them frozen for several weeks. 2-3 months.
