Saucy Summer Squash Skillet

My garden is producing tons of zucchini (from two plants — four seeds on each plant “mound”) and is ready to explode with crookneck squash.  A super easy, super quick, super flavorful skillet meal… this is one of our favorite ways to use it all up.

Saucy Summer Squash Skillet

  • 1 Tbsp. oil
  • 1 pkg. smoked sausage (kielbasa, etc.)
  • 1 yellow summer squash (I used crookneck)
  • 2 smallish zucchini
  • 1 onion, coarsely chopped
  • 1 (14 oz.) can diced tomatoes (I’ll use fresh when I have them!)
  • 1 (10 oz.) can diced tomatoes with green chilies (Rotel)
  • 1 (8 oz.) can tomato sauce
  • 1-2 cups frozen corn
  • 1-2 Tbsp. Italian Seasoning
  1. Heat oil in a large, heavy skillet.
  2. Quarter and slice zucchini and squash.
  3. Saute zucchini, squash, and onion in oil until tender.
  4. Add sausage (cut in half, and sliced) tomatoes, Rotel, tomato sauce, corn, and seasoning.
  5. Simmer for about 20 minutes, stirring occasionally.

This looks really good! Unfortunately I am not gardening this year, but there is an abundance of squash at the farmer’s market for great prices. I have been looking for more frugal meals ideas, so I will definitely be trying this!

This sounds good! I needed an idea for supper tonight — and I have some squash, zucchini and tomatoes in my garden. I’m also at that tricky time of the month when the grocery money is gone and the days of the month aren’t. . .

Another winner! We had this for dinner tonight and my family loved it. I used what I had on hand so I skipped the tomato sauce, Rotel, and seasoning and substituted with pasta sauce. Yummy!! Thanks for sharing.
