Everything’s better with bacon. I believe that should be one of life’s mottos. It’s certainly the case with Brussels sprouts, anyway! I did not grow up eating these itty bitty cabbages, and while I can’t say I was missing out, I do enjoy this version.
Roasted Brussels Sprouts with Bacon and Onions
- 2 cups fresh Brussels sprouts, cut in half
- 4 slices bacon, cut in ½ inch pieces
- ½ cup coarsely chopped onion
- salt and pepper to taste
Slice bacon directly onto a baking sheet. Layer Brussels sprouts and onions. Sprinkle with salt and pepper. Roast at 400° for 10 minutes. Toss and stir, coating in bacon grease. Return to the oven for another 10 minutes or so. Serve hot.
