I love roast and I look forward to the left overs. I can be pretty simple, at times. I love a left over roast sandwich, with mayo, meat, and some ketchup. I know, but really, it is YUMMY! The burrito recipe does look great.

All of your ideas sound so delicious Amy. Roast beef is one of those things that I just don't make very often because it always seems so expensive. But now I'm thinking if I actually break the price down to see how many meals we'd get out of it, it wouldn't be so bad.

I love your crock pot recipe for it too. I'm going to start watching sales and add it to my list. Thanks for all the ideas!

When I was growing up we always had chuck roast on Sunday afternoon. Mom put it in the oven before church to cook long and slow (like a crock pot but before they were around) and it was falling apart tender and delicious when we got home. Back then she made stew with biscuits on top or ran it thru a grinder and made beef salad sandwiches.

I still do the same except I usually use the crock pot and like you, I pull it apart. I've added a couple other redos. We make gravy from the juices like Mom did. We like to have the beef and gravy over noodles or rice or potatoes or biscuits. We also make sandwiches with the pulled apart meat.

I love your quiche idea. I've never made a quiche, but I might try a Bisquick impossible pie or even take the plunge and try a quiche! Thanks for the good ideas.

That quiche looks delicious! We're having BBQ Roast Beef sandwiches for supper tonight, as a matter of fact. :)

I love cooking large amounts of meat at a time to use for multiple meals. I love whole chickens for this reason too!

Thanks for sharing some yummy ideas I wouldn't have thought of.

We will do french dip sandwiches with leftover roast. Your quiche looks great! We just don't eat a lot of beef though as dd is allergic to it. I do miss it sometimes and ALWAYS eat it when we go out to eat.

Thank you for the great looking ideas and recipes for leftover roast beef. I am always trying to find new ways to remake leftovers into something new. I make Orange Beef with it, fajitas, beef au jus, beef stroganoff, etc. :D

We love roast beef here! Matter of fact, I just did a beef roast with carrots, pototoes, and onion soup mix last week! Then the leftovers, I made into beef veggie soup and sent the majority of it over to a family of my church, whose mother is battling breast cancer for them a homecooked meal. I cubed up the leftovers for the soup. Here is my recipe... http://glimpseofsonshine.blogspot.com/2007/10/two-ways-to-do-beef-stew.html

Thanks for sharing! You have given me some new ideas to do with it! :)
