Peanut Butter Choc-Oat Bars {With Peanut Butter Glaze}

Sometimes you just crave a classic.  Something easy made from pantry ingredients already on hand.  Something with an old-fashioned combo that tastes like warm memories.  Peanut Butter Choc-Oat Bars is it!

Peanut Butter Choc-Oat Bars


Peanut Butter Choc-Oat Bars

½ cup butter, softened
½ cup sugar
½ cup packed brown sugar
½ cup peanut butter (creamy or crunchy, either works great)
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon salt
1 cup unbleached flour
½ cup quick oats (I use old-fashioned and just give them a quick pulse in the food processor or blender.)
1 cup chocolate chips (We like semi-sweet.)

Cream butter and sugars.  Add peanut butter, egg, and vanilla.  Beat together until smooth and fluffy.  Stir in baking soda, salt, flour, and oats.  Spread into a 9×13 baking dish.  Sprinkle with chocolate chips.

Bake at 350° for about 20 minutes, until bars just start to turn golden brown.  Drizzle warm bars with peanut butter glaze.

Peanut Butter Glaze

½ cup powdered sugar
2 tablespoons peanut butter
2 tablespoons milk

Stir together until smooth.



When I teased Facebook with the above photo, a reader remembered these bars from camp.  I remembered the good ol’ days of chewy desserts in school lunches.  What old fashioned desserts bring on the memories for you?

    I figure if the flour (plus oats here) is a higher amount than the sugar, that’s a very good start! These sound great!

  4. I’ve made these many times. When I got the recipe from a church cookbook, they were called Peanut Butter Fingers!

    My. Oh. My. I just made these for my husband and me tonight. I didn’t read the instructions and mixed the chocolate chips in, and they were still delicious. And I didn’t measure when I made my glaze and it was too thick to spread like this, so there’s more like glops of it all over the top. Basically I stunk at following directions and the final product is still delicious. DELICIOUS!!!
