
We’ve got three nights of home games this week, and this is our first week of religion classes for the year (I’m teaching the high school confirmation class.) So, suppers have to be make-ahead or crockpot meals to save my sanity and make sure everyone gets fed.
I’m also choosing two of our meals from Once-A-Month Cooking: Family Favorites this week. I’ll be reviewing the book and giving one away on Wednesday. Be sure to come back and enter to win!
Sunday, October 4
- cereal in a mad dash out the door for church (I told you I wasn’t a purist!)
- birthday dinner for our 1 year old niece – I took deviled eggs
- leftover taco soup, clean out the fridge
Weekday Breakfast: oatmeal with raisins, lazy granola, scrambled/fried eggs with toast or muffins
Weekday Lunch: pb&j, grilled cheese, carrot sticks, fresh fruit, quesadillas, leftovers
Suppertime:
- roast beef burritos topped with lettuce and cheese, corn muffins
- cheesy potato soup, cinnamon rolls
- Mexican Two-Bean Chicken Chili (from Once-a-Month Cooking)
- Italian Slow Cooker Chicken (from Once-a-Month Cooking), green beans
- Friday game night: leftovers or sandwiches and fruit, game snacks
Saturday, October 10
- football breakfast: Lynn’s overnight pancakes (with blueberries), sausage links, scrambled eggs
- clean out the fridge
- family movie night: popcorn and smoothies or fresh fruit

The Roast Beef Burritos look yummy! I love my crockpot…couldn’t live without it!
You know what would be fun? Doing a once-a-month cooking carnival/link-up or something like that. It seems like a lot of us have it on the brain right now, and we could all share/combine what we’re learning, how we make it work with little kids, frugal budgets, etc.
I just posted about this on Saturday, and I saw it on Life As Mom too. Just a thought!

Since I’m ‘renewed’ to menu planning I would LOVE more info on the Once a Month cooking and how it actually works for people. I’ve never been great at cooking in advance, plus I have minimal freezer space.
You are just about as busy as I am this week:-) The menu plan will be our saving grace!
