As of Friday night, I’ve got 5 farm-fresh, hormone/antibiotic/chemical-free chickens in my freezer. So excited! More to come on the new farm we discovered, what we’re going to do with the chickens, and a little chatter about buying local and supporting the little guy. For now, here’s what we’ll be eating this week.
Sunday, October 25
- fried eggs and toast
- grilled steak and chicken, baked potatoes, corn, garden salad (invited to my aunt and uncle’s with their whole family – fun!)
- clean out the fridge
Weekday Breakfasts
- eggs (scrambled or fried), toast, muffins, Lazy Granola, oatmeal with raisins, french toast
- Friday Football Breakfast (Our last game is Thursday night. I never fix breakfast after the last game, because there is no reason to watch film. This year’s group was having none of that. And I’m a sucker… so I’m fixing breakfast for them before school on Friday.)
sausage and ham breakfast casserole, big batch cinnamon rolls, blueberry pancakes (made special for the senior who requested them) apples and cream cheese apple dip
Weekday Lunches
- quesadillas, leftovers, pb&j, grilled cheese, fresh fruit and veggies
Suppertime
- roast chicken and veggies, ala FishMama
- pan burritos with lettuce/tomato/cheese, corn muffins (didn’t get to this last week)
- 15-bean and ham soup, homemade bread
- game night sandwiches/leftovers
- spiced-up tilapia, and whatever tastes good with fish – suggestions? rice? veggies? I don’t fix a lot of fish…
Saturday
- one of the pumpkin recipes from this massive list… pumpkin pancakes with chocolate chip jack-o-lantern faces, perhaps?
- clean out the fridge
- chicken noodle soup if we’re home, but we might be out “spooking” family on a costume road-trip

Fish tastes great served with sweet peppers. But my mom always chopped up a tomato and half an onion very fine to add some kick to fish.

I always like brown rice with fish – makes me feel all healthy, I guess! My husband, on the other hand, likes baked potatoes with fish. But likes baked potato with anything! I usually try to round it out with a nice, bright-colored vegetable, too – sauteed spinach or swiss chard is always good.

Amy, I just like it with a little butter, salt and pepper. We use brown basmati, which has a mellower flavor than plain brown rice, I think. Sometimes, if I’m feeling particularly adventurous, I’ll do a pilaf – melt some butter in your saucepan and saute some onion (or scallion) (or garlic) just until softened, then add the uncooked rice to the butter and cook and stir until the rice is sort of “glistening” – you basically want to coat each grain of rice with the butter. Then add your liquid – water or chicken stock, usually, maybe a splash of white wine, and continue cooking like you normally would. I’ve added sliced almonds with the rice, and maybe dried cranberries with the liquid, too, or sometimes a little lemon zest or some herbs that complement whatever’s going on on the rest of the plate.
I would love for you to post your 15 bean and ham soup. I have been trying to fix more beans for my family but so far we have yet to find a recipe we all like. That sounds delicious!
@Jenny Zepf, Well… I cheat.
I just buy the 15 bean soup mix at the store (comes with a seasoning packet) and follow those directions. I cook it with the remains of a bone-in ham. So easy, frugal, and delicious!
We usually eat rice and a steamed veggie (cauliflower, broccoli, maybe asparagus, etc.) with fish. The other night I did a baked salmon with the Spinach Rice Casserole at Tammy’s Recipes and that was a nice combo, too!
We like to serve grits with our fish. The best way is with cheddar and butter mixed in
. Frugal and something a little different!
Our favorite side dishes, with fish, are mac n cheese, brown rice, potato and mac salad, oven fries, and mixed green salad. I hope these suggestions help.

I don’t eat a ton of fish, but my hubby loves it. When I do, it’s tilapia. I always like to eat it with rice, so here’s a really simple but flavorful recipe that I LOVE:

Questions: How long does it last in the pantry in tupperware? What is the best way to keep it?
Comment: I had some left that the kids were not eating, so I melted some dark chocolate and mixed in the granola and spooned it onto waxed paper. After 20 minutes in the freezer yummo…and the kids ate it. They think I make fabulous “candy”
@Mari, I’ve had it in tupperware in a cabinet for 2-3 weeks and it’s been just fine. Longer than that, and I’d probably stick it in the freezer.
The dark chocolate addition is brilliant. I will NOT be telling my hubby about that.
