When a big holiday looms we try to take it easy on the cooking and eating a few days before. Dining on light, healthy fare takes the guilt out of the impending gluttony, I suppose.
Breakfasts will get bigger as the week goes on. When there’s no school and we don’t have to be up at 6:00 in the morning, I tend to fix a hearty morning meal and then we eat one other meal during the day. Fresh fruit and veggies for snacks if we need them.
Here’s what’s cookin’ this week.
Sunday, November 22
- eggs and toast
- took some friends out for lunch
- popcorn and apples
Breakfast Options: oatmeal with raisins, eggs (scrambled or fried), pizza omelet, blueberry pancakes, waffles
Lunch Options: leftovers, sandwiches (pb & honey, grilled cheese) fruit and veggies
Suppertime
- fish sandwiches on homemade buns, carrot sticks, applesauce
- turkey strips, cheesy mashed potatoes, broccoli
- veggie beef soup, french bread
- Thanksgiving with family ~ I’m taking holiday dinner rolls, strawberry pretzel salad, sweet corn, and bacon-wrapped green bean bundles (Look for this recipe next week during the 2nd Annual Bloggy Progressive Dinner.)
- black bean soup, homemade bread or muffins
Saturday, November 28
- big breakfast (one of the above options)
- clean out the fridge

I’m looking forward to the recipe for the bacon wrapped green bean bundles.
I noticed that today you had breakfast, lunch and then popcorn and apples. I was just wondering if this was dinner or if you chose one of the supper options from your menu. I was just wondering because dinner tonight for us was popcorn and pineapple.
I make dinner every night but sometimes (especially this week with Thanksgiving right around the corner) it’s nice to eat light. And although it might not be the most well-balanced meal, I think air popped popcorn and fresh pineapple are pretty both pretty light, healthy options for us to snack on. And the kids thought it was the greatest idea ever! I also have to say that your dinner menu this week looks exceptionally yummy!
@Shelby, Popcorn and apples (and bananas!) were our supper tonight. We try to do that once a week or so. The kids love it, and there are much worse things to feed a family.
Good idea eating light before the Thanksgiving day meal. I have not thought of that, will share with my hubby. Great post.
