
Our sweet grandpa neighbor knows my heart. Look what he brought me from his garden yesterday! I’ll take a bouquet of rhubarb over a bouquet of flowers any day. Can’t wait to make some Rhubarb Apple Crunch this afternoon. Check back for the recipe tomorrow!
Going to skip the monthly menu plan in May, partially because we’ll only all be home about 4-5 evenings a week and mostly because I got busy and May snuck up on me! I doubt we’ll go hungry. Here’s this week’s plan:
Sunday, May 2
- cereal before church
- sausage, waffles, eggs after church
- spicy shredded pork, cheesy potatoes, green beans, rhubarb apple crunch
Monday, May 3
- scrambled eggs, cinnamon rolls (I’m making some for National Teacher Appreciation Week; we may as well enjoy, too!)
- pb&j or grilled cheese, carrot sticks, apple slices
- potluck banquet at school – I’ll take Grandma’s banana nut cake (recipe coming soon!) and maybe some sweet corn
Tuesday, May 4
- fried eggs, toast
- frozen pizza (yes, I admit it, this is my “go-to” when I’m gone all morning… and I will be), fruit
- if the wind’s not blowing fiercely (it’s supposed to) I’ll take the kids on a surprise picnic to the park, if it is then we’ll do baked potatoes topped with chili beans and cheese (hubby has a track meet)
Wednesday, May 5
- breakfast burritos
- snack lunch tray
- spicy pork tostadas with lettuce/sour cream/salsa/guacamole, mexican rice (didn’t get to this last week)
Thursday, May 6 (Happy Birthday to our 7yo!)
- cereal, blueberry muffins (birthday girl request)
- quesadillas, apples
- grilled burgers and hot dogs, deviled eggs, homemade french fries, strawberry shortcake (birthday girl request)
Friday, May 7
- eggs, muffins
- pb&j or grilled cheese, carrot sticks, fruit
- leftover grilled goodies (another track meet)
