The signs of spring have remained, and we took full advantage over the weekend! Yesterday my hubby trooped the kids to the farm for the afternoon to help with all things cows and calves and ear tags and fences and whatever else there was to do on a sunny, 65° day.
Today we spent the day with my family eating and celebrating a birthday, playing and gabbing. We’ll reap the benefits of my mom fixing too much food as we enjoy some leftovers tomorrow night. What a fun weekend!
Since I made a monthly menu and spent a whole day cooking last week, menu planning should be easy this week, right? Here goes…
Sunday, March 7
- scrambled eggs with sausage and cheese, toast
- grilled hamburgers/chicken/hot dogs/smoked sausage and all the fixin’s, including ice cream and chocolate sheet cake (I did manage to contribute some deviled eggs)
- popcorn and grapes
Weekday Breakfasts – oatmeal with raisins, lazy granola, overnight breakfast casserole, fried eggs and toast
Lunches – leftovers, pb&j, grilled cheese, fresh fruit and veggies
Weeknight Suppers
- leftover grilled goodies, broccoli/cauliflower salad (one of my favorites!), baked beans, fruit
- clean out the fridge (Since we were gone all weekend, we still have some leftovers that need to be eaten or tossed. I do NOT like to toss food!)
- easy taco bake (in the freezer) with lettuce, salsa, cheese, sour cream
- homemade pizza, fruit and veggies
- waffles with fruit topping, eggs
And then… we’re on spring break! All bets are off for our weekend plans. We’re hoping (*hoping*) to get some home improvement projects done that week (we know how to party during spring break!), so the cooking will be minimal and easy! Anyone want to come help?!

We’re having taco bake this week, too. I pulled it out of the freezer last night. I wonder how long it takes to defrost. Hmmm…

I LOVE homemade pizza! We like to make it on Friday nights and I let each of the kids make their own! Thy love picking their own toppings and creating their masterpiece! Then we all cuddle up on the couch, eat pizza and watch movies! Perfect evening!
That does sound like the perfect family “date.”
