Menu Plan, Week of March 8

I’m still struggling to find a format that works for me with my menu posting.  Let’s see if this works…

Sunday, 3/8

  • whole wheat cake donuts, eggs
  • blackened salmon fillets (Oh my goodness ~ I’ve never fixed salmon before and was a bit hesitant.  These were so very good, though!  I used only 1 tsp. cayenne rather than the called for 1 Tbsp. and then I ended up using only 1/2 of the spice mixture because my salmon had skin on one side.  I finished them off in the oven.  Yum!) , steamed asparagus, garlic mashed potatoes
  • popcorn, fresh homemade strawberry lime slushes (recipe Tuesday!)

Weekday Breakfasts:  french toast with homemade syrup, Amish Baked oatmeal with raisins baked in, fried eggs and toast

Weekday Lunchtime: leftovers, sandwiches, quesadillas, carrot sticks, fruit, muffins, cheese

Weeknight Suppers

  • chicken broccoli rice casserole (I’m experimenting here.  Will post a recipe if it turns out!)
  • smoked sausages with roasted red potatoes and green beans
  • cavatini
  • leftovers
  • lentil rice burritos

Saturday, 3/14

  • blueberry pancakes, scrambled eggs
  • taco soup (topped with cheese, sour cream, corn chips) corn muffins
  • clean out the fridge, popcorn, free-for-all

  6. Yum! Taco soup! I made it for the first time a few weeks ago and the hubby and I loved it! I think I’m going to have to add it to an upcoming menu!

  7. Another vote for the taco soup- Ken loves to get it out… I think I’ll surprise him and make this up for him to take to work. :)

  8. Donuts seem way too intimidating to me! Let us know how they work out for you though, and maybe I’ll get the courage up to try them!
