
What with the blizzard and all over the weekend… in Kansas… at the start of Spring Break… at the end of March… we’ve recently been subsisting on popcorn, homemade hot cocoa (this recipe is really rich – we used more than twice the milk that it called for), and snow ice cream. I’m guessing at some point in time (when the snow melts) we’ll need to eat real food again, so here’s the plan.
Sunday, 3/29
- pizza omelets (recipe coming Tuesday), yogurt coffee cake muffins
- roast, potatoes and gravy, carrots
- more snow ice cream, and hot cocoa (Did you know that dumping lukewarm homemade hot cocoa into snow makes the best ice cream?! Really!)
Spring Break Breakfasts
- sausage biscuits and gravy (I bought sausage today just so I could try Sara’s biscuit recipe… don’t they look beautiful?)
- oatmeal or granola with fruit
- fried eggs, bacon, toast
- waffles with smoothies
- scrambled eggs with muffins
Spring Break Lunches (served with fresh fruit and veggies, or smoothies)
- pigs in a blanket (in freezer)
- brown bag burritos (in freezer)
- quesadillas
- sandwiches
- leftovers
Spring Break Suppers
- tater tot casserole, peas
- pizza braid, veggies with dill dip
- ranch turkey pasta dinner
- bbq beef sandwiches, deviled eggs
- refried bean enchiladas, corn muffins
Since we are on Spring Break, we’d kinda like to get out a day or two to work at the farm or visit the zoo. There is rain in the forecast (which we certainly are not complaining about after a long dry spell) and some massive snow melting to be done, but our hopes remain high. My menu plan will end with Friday this week just in case we need to do some rearranging as our “vacation” progresses.

that ranch turkey pasta dish looks great — as does the hot chocolate! Sara’s biscuits are on my list too … they look tasty.
Looks yummy…we have been spared a snow storm for the past few weeks and it is almost all melted. But in New England, you could have 80 degrees today and a Nor’Easter tomorrow!
I am going to have to try those biscuits too! I have never been able to find a recipe that “I” can make well…thanks for sharing!
