
As I type this while it’s 86° in my home, I think I can safely say that summer is here! Being the cheapskate that I am, I refuse to turn the air on when a cool front is on the horizon… and I don’t plan to use the oven much until mid-week when the temps cool off a bit. Here’s what we’ll be eating!
Sunday
- waffles, scrambled eggs (brunch)
- graduation party for a dear exchange student – we will miss her! (early supper)
Monday
- scrambled eggs, muffins
- salmon patties, salad, pears
- Subway (our oldest won some free Subway kids meals!)
Tuesday
- baked apple oatmeal
- pigs in a blanket, carrots, apples
- spaghetti, salad, French bread
Wednesday
- French toast
- sloppy joes, deviled eggs, carrot sticks
- chicken stir fry with rice, cornbread muffins
Thursday
- eggs and toast
- leftovers
- roast beef, potatoes, carrots
Friday
- smoothies, muffins
- tuna melts, fruit
- homemade pizza, fruit
Saturday
- blueberry pancakes, eggs
- roast beef burritos
- clean out the fridge

I made your Lentil and Brown Rice Casserole over the weekend for the first time and loved it! I substituted a little curry powder for the italian seasoning, and used frozen peas instead of green pepper. Thanks for a tasty recipe.
