Menu Plan, Week of June 1

As I type this while it’s 86° in my home, I think I can safely say that summer is here! Being the cheapskate that I am, I refuse to turn the air on when a cool front is on the horizon… and I don’t plan to use the oven much until mid-week when the temps cool off a bit.  Here’s what we’ll be eating!

Sunday

  • waffles, scrambled eggs (brunch)
  • graduation party for a dear exchange student – we will miss her!  (early supper)

Monday

  • scrambled eggs, muffins
  • salmon patties, salad, pears
  • Subway (our oldest won some free Subway kids meals!)

Tuesday

Wednesday

  • French toast
  • sloppy joes, deviled eggs, carrot sticks
  • chicken stir fry with rice, cornbread muffins

Thursday

  • eggs and toast
  • leftovers
  • roast beef, potatoes, carrots

Friday

Saturday

    I made your Lentil and Brown Rice Casserole over the weekend for the first time and loved it! I substituted a little curry powder for the italian seasoning, and used frozen peas instead of green pepper. Thanks for a tasty recipe.
