Whew! What a weekend! We are ready for some routine and some quiet and some normal. Hmmm… wonder if we’ll get any of that this week?!
I’m picking 2-3 zucchini from the garden daily. I’ve dug up my new potatoes and my squash is ready to explode! Lots of zucchini and squash in the menu for the next several weeks… until we all get sick of it and I freeze it for soups and breads over the winter.
Here’s what we’re eating this week.
Sunday, July 5
- scrambled eggs, assorted muffins from the freezer
- family reunion — I took deviled eggs, caramel pretzel sparklers, and strawberry/banana homemade ice cream
- desperation dinner — dressed up with onions, squash, zucchini, and Italian seasoning
Breakfast Options
- homemade granola
- pancakes topped with fruit and homemade syrup
- waffles
- eggs – fried, scrambled, omelets, etc. with muffins or toast
Lunch/Supper Options
- roast beef, mashed potatoes and gravy, carrots
- deviled chicken, new potatoes and creamed peas, zucchini bites (new to me)
- bbq beef sandwiches, roasted veggies (new potatoes, zucchini, squash, onions)
- summer lasagna (new to me)
- monterrey chicken quesadillas (been trying to get to this one for three weeks…)
Snacks/Meal Fillers
- fresh veggies and dip
- fresh fruit
- smoothies
- leftovers

Oooooo…Summer Lasagna!
I think I may try that desperation dinner for a late lunch today! I have all the fixin’s, and no plan for lunch, but now I do! Thanks!!
