Hear ye, hear ye — for the first time in her two years of life, our little girl is sleeping past 6:30 AM, and we are soaking it up! Busy days, late nights (ballgames, catching fireflies, traveling), and late mornings. When we have late mornings I fix a pretty big brunch, then we have an early supper with snacks before or after as needed. This works so great for us in the summer!
We’ve still got lots of zucchini and squash in the garden, but armed with a plethora of zucchini recipes, I’m ready to use it up! (or to shred and freeze some to use later)
Here’s what we’re eating this week.
Sunday, July 26
- pancakes with homemade syrup, scrambled eggs, grapes
- I co-hosted a bridal shower family cookout this evening. My contribution to the party was baked beans, deviled eggs, and chocolate sheet cake.
Friday is the last morning of summer weights, so I’m fixing breakfast for all the athletes. Some of them are slackers and have been to weights only a few times. But they’ve been told by the upperclassmen to “Be sure to come on the last day because Amy fixes breakfast.”
If I wasn’t such a softy, I’d turn them away at the door if they haven’t been to weights X number of times. I talk big, but have little follow-through…
I’ll be serving breakfast casserole, a big batch of cinnamon rolls, and whatever fruit happens to be on sale later this week.
Other Breakfast Options
- eggs (scrambled, fried, omelets) with muffins or toast
- homemade granola and fruit or yogurt
- pancakes or waffles with peach topping
Lunch or Supper
- saucy summer squash skillet
- BLT’s with fresh tomatoes from the garden (yipee!), cheesy zucchini crisps
- garden vegetable calzones
- zucchini lasagna
- beef and chicken fajitas (recipe coming!)
Other Meal/Snacks/Meal Fillers
- leftovers
- smoothies
- sandwiches (grilled cheese or pbj)
- fresh fruit or fresh veggies

Enjoy the zucchini lasagna… just make sure to roast or cook the zucchini first for a few minutes to prevent the lasagna from getting watery from all the liquid that can be cooked out from the zucchini.
That’s what we do in the summer. It really does work well, doesn’t it?
I’m cracking up about not showing up for weight room…if they didn’t show all summer, my HUSBAND would turn them away at the door! I’m like you, I’d feel bad and “crack”… but hey, there’s no room for slackers on a FB team!!! Sounds great!

I tend to have eggs more for dinner than breakfast. I just don’t like cooking on mornings I have to be at work.
