Just arrived home from a 36-hour mini vacation. A whirlwind of fun activity, great friends, and unhealthy food.
Pretty glad my garden is bursting with fruits and veggies this week so we can get back on track!
Here’s what our menu looks like.
Sunday, July 19
- donuts and juice in the hotel room — we call that Christmas in July, and I was Santa!
- My sister-in-law served up a late post-baptism lunch for her baby girl. We ate barbecue brisket, crockpot potatoes, grilled squash and zucchini, corn on the cob, deviled egg salad, baked beans, and fruit salad
- Arby’s on the way home. Hoping my roast chicken sandwich qualifies as food…
Breakfast Options this Week
- homemade granola with fruit and milk
- oatmeal with raisins
- toast with peanut butter and honey, fruit
- pancakes or waffles with fruit topping or homemade syrup
- eggs (scrambled, fried, omelets) with toast or muffins
Lunch/Supper Options — served with veggies from the garden (squash, zucchini, tomatoes, cucumbers) and fresh fruit
- summer chili (recipe coming)
- grilled chicken, grilled veggies
- taco grande (recipe coming)
- zucchini quesadillas
- homemade pizza or pizza braid
Meal fillers/Snacks
- smoothies
- fruit and veggies with dip
- leftovers
- sandwiches

Shhhhh…don’t tell anyone but, I am making Vegan Chocolate Zucchini Cupcakes with Vegan Chocolate frosting for my cupcake challenge tonight:-) Cross your fingers that I win! My post will be up at midnight:-)
We’re on zucchini/squash overload, too, and I plan to use it for at least a few dinners this week. I’d forgotten about the zucchini quesadillas, but will have to try that.

I love brisket. We’ve made it in the crockpot a few times recently.
