Menu Plan, Week of July 17

This inferno that is summer in Kansas is sapping my brain cells, I think!  Still working on the pantry challenge, and we’ve got a birthday this week, so some favorite 4yo foods will grace the table.  We’ll add a cold salad to a lot of the following meals.  Actually, maybe we should just live on salads and smoothies until the temps drop below 100°.  Think my family would go for that?  😉

  1. i did a menu plan – – finally! like you, the heat had zapped my desire to ‘cook’.

  2. We have a meal plan, but it’s so hard not to just eat fresh fruit and sandwiches to avoid the oppressive heat put out by the oven!

  3. I was glad to see the “Lazy Granola” recipe. I’ve been looking for a granola recipe that doesn’t require a zillion ingredients. I’ll definitely have to mark that to try!

  4. I am so with you on the salads and smoothies!! We have had crazy heat here in Texas too. And rain? We are about 9 inches below normal.
    Your menu looks great. I especially like your ideas for snacky meals. I need to start doing that more.

  5. I am with you 100% on the salads and smoothies. I’m pretty sure we’ll have to add a cold pasta salad to our BBQ dinner on Wednesday and then enjoy the leftovers for lunches. Thanks for sharing your menu today, Amy!
