In the interest of all things zucchini, and to help me out with the 2-3 that I pick daily, I’m sending out an all-call.  What are your favorite, tried-n-true zucchini recipes? I’m compiling a post to share next week.  Would love to have your link!  (Yes, I do know to cube it and freeze for soups or shred it and freeze for breads/cakes/muffins.  I’m doing that… and I’m sharing… but I still have lots!)

Here’s what we’re eating this week, lots of zucchini included!

Sunday, July 12

  • scrambled eggs with cheese, chocolate pudding zucchini muffins (yes, I do know better than to serve these for breakfast)
  • grilled steak, garlic mashed potatoes, grilled veggie skewers
  • popcorn, banana/peach/orange smoothies

Breakfast Options

  • homemade granola with peaches or raisins and milk
  • French toast
  • pancakes with fruit and/or scrambled eggs
  • waffles with fruit and/or scrambled eggs
  • scrambled/fried eggs with toast or muffins

I LOVE zucchini!!! As a side dish, we make it by cooking it until slightly tender, and topping it with shredded cheddar cheese and bacon bits :)

I have a Chocolate Zucchini Cake recipe, I haven’t posted it yet, I’ll try and get it ready for you this week, soon.

I have heard of people making lasagna out of large zucchinis. Also, I will shred it and “hide” it (I say that loosely because my kids always know) in sausage rigatoni bake. Your cavatini would be a good place for it.

Vegetable Manicotti and Tuesday’s main dish and side on my menu uses zucchini. These were all good and a success in our house!

We also throw it is stir fry and it just takes the flavor of everything else.

I didnt post my menu this week (we’ve been out of town and today is my Hubby’s birthday; Just busy!). I make mini meatloaves too! Looks like a good week!

I know we had a zucchini abundance this year also, so I was slipping zucchini in everything, from pasta, to soups etc. Hope you guys enjoy the Zucchini Quesadillas

I just did a recipe search for muenster cheese (have an abundance leftover from party yesterday) and I came across this recipe for Italian Zucchini Crescent Pie…I know you were looking for new “zuke” recipes.

Southern Living’s Vegetable Bacon Noodle Toss is one of my favorite way to use up garden veggies. We eat it hot or cold.
