Menu Plan, Week of January 22

After picking up our first local(ish) Azure Standard order and restocking some other produce, the fridge is full again!  I’m afraid a pantry challenge isn’t terribly challenging with all this good food, but if I remember my original goals of organizing and using what we have, we’re still doing alright!  Let’s take a peek into the freezers later this week, shall we?

Last week’s fried rice got bumped by beef fajitas when I realized how big my package of round steak was.  Feels great to get two meals (plus leftovers) out of one package of meat.  We still have leftover pork chops, so the fried rice will move to this week.

  1. Are hard cooked eggs enough? I think I would have to feed my kids three each to fill them up. But, maybe that’s having teenage boys?

    • Oh heavens. That’s just a list of the things I have around for lunch. Maybe I should put it all on one line… (no, the eggs aren’t enough… ;) )

  2. Have to make waffles with homemade syrup – my mouth is watering

  3. It’s been a *long* time since I’ve made your loaded tostadas! Putting them on the menu this week. We love eating out of the pantry, makes for somewhat peculiar meal combinations at times. ;)

  4. Wow, those waffles look amazing! Now I’m hungry! I have a breakfast for dinner night planned too. Can’t go wrong with that as far as the kiddos go!

  5. Hello Amy,
I’m interested in ordering the “juice” apples from Azure Standard. What were your feelings about them? Were they ugly? Did your kids or Husband give you any trouble about them? Also, have you ever ordered the “juice” grade oranges? Thanks for any information you can share with me.

    • I think the juice apples are the best buy on the whole Azure site. ;) The quality is great, but they aren’t the “perfect” apples you see on store shelves. Shaped funny, too small, rough spots on some of them. My family hasn’t given me any grief over them, likely because I slice their apples anyway. If there are “bad parts” I just cut those out. My husband likes the 50 cents/pound price. :)

  6. Those Tostadas look great!
