Menu Plan, Week of February 21

I’m in denial. One week from tomorrow I’m supposed to do my first ever major, full-blown Once a Month Cooking day.  I don’t have all of my groceries.  I haven’t studied and altered my instructions (we’ve changed the menu a bit).  I’m not ready! So glad Sherry is coming to help me with this.  She’s gonna have to hold my hand!

As for this week?  I can swing that.  Here’s what we’re eating.

Sunday, February 21

  • banana pancakes, sausage patties, scrambled eggs
  • green chili chicken enchiladas (recipe coming tomorrow!), tossed salad
  • popcorn, special hot cocoa (perfect end to a frigid, icy day)

Breakfast Rotation: crustless sausage quiche, oatmeal with raisins, eggs (scrambled/fried) with toast or muffins

Lunch Rotation: sandwiches (pb&j, grilled cheese) with carrot sticks and fresh fruit, leftovers, salad, hard boiled eggs

    Doing a huge cook session with a friend really does make it fun. Especially if you have a good friend who really UNDERSTANDS you. (I have some hilarious stories of cooking with friends!)

    Menu looks yummm. We had red beans & rice tonight, and it truly was the perfect comfort meal!

    The Stuffed BBQ Potatoes remind me of a great BBQ House in the town where I grew up. THE BEST! I’ll have to remember those for one of our meal plans. Thanks!

    My husband would love to live with you this week. Roast, ribs, BBQ, all of his favorites!

    You will do great! It might take longer the first time, but you will figure it out. And it will make your life easier for March.

    I am trying to get meals in the freezer, as softball starts today, which means my husband will be scarce until the middle of May. Having some back ups will really help out.

    You sound like me! I was looking forward to a OAMC session but the only thing I have prepared is the menu. I haven’t even began grocery shopping. I think I may try it next month instead. Having a friend to motivate you will be a big help! Plus I’m sure you’ll have some good laughs and a couple of grea memories to share! Good luck and I can’t wait to see how everything goes!
