So, it’s Valentine’s Day and I’m sitting in my quiet house with only the company of a nasty head cold that I just. can’t. shake. How romantic! Hubby took the kids to the farm for a fun day with their cousins, which in my congested/sinus pressure/headache state is the absolutely most romantic thing I could ask for!
Thankful today for my February Menu Plan. I’m out of menu planning practice since Blissdom, and then last week we used up all the frozen meals that I intended my family to use while I was gone. They had “funner plans, mom.”
I’ll be working hard to clean out our freezer stash again in the next two weeks, in preparation for the Once a Month Mom Cookoff!
Here’s what we’ll be eating this week.
Breakfasts – a rotation of breakfast sandwiches, eggs (fried/scrambled/omelets) with toast or muffins, pancakes, waffles, french toast, lazy granola, oatmeal with raisins, and the occasional bowl of cereal with bananas
Lunch Rotation – sandwiches, quesadillas, fresh fruit and veggies, leftovers, snack lunch tray, smoothies
Suppertime
- chicken fried steak, mashed potatoes and gravy, green beans
- buffalo chicken spaghetti, peas
- refried bean enchiladas, tossed salad
- homemade pizza (sausage), fresh fruit
- broccoli cheddar soup, cinnamon rolls

Fight off a cold here, too…but seem to be on the mend. Feel better!

Thanks for reminding me of that Buffalo Chicken Spaghetti recipe. We tried it a while back and really liked it. Then I guess I didn’t save the recipe and I forgot all about it.

I love menu plans and I adore reading others!! YUM to all of it.
It took me awhile to get better. How about being sick for almost 2 months.
I’m always on the lookout for yummy menu choices. We’re still having to watch our pennies.
Yuck! Can’t imagine 2 months of this. I’m all better now.
