Between a very frightening day with our nearly 15 year old dog (that’s 105 in human years!), a fun date night over the weekend (a gift from one of the families I babysit for) and the desire to squeeze every penny out of our pool pass (pool closed today), we didn’t end up eating everything on last week’s menu. Thank goodness for desperation dinner and frozen smoothie ingredients!
If you notice some repeats this week, now you’ll know why.
One more week before school starts, but Lance’s summer is over. Football 2-a-day practices begin at 6:00 Monday morning. I’m planning to make some of these mid-week. I can’t make them for Monday or the guys will expect me to make something every day. We can’t have that now, can we?!
Here’s what’s cookin’ at our house.
Sunday, August 16
- scrambled eggs with cheese, strawberry/zucchini/kiwi muffins (yes, I’ve been experimenting — good stuff!)
- a quick smoothie before an afternoon of swimming
- squash-sagna, sweet corn, cheesy garlic buns
Breakfast Options
- lazy granola (recipe tomorrow)
- peanut butter baked oatmeal
- eggs (scrambled, fried, omelets) with muffins or toast
- French toast
- blueberry pancakes, fruit-topped waffles, homemade syrup
Lunch/Supper
- loaded tostadas
- BLTs, fried okra (from the garden)
- ranch chicken and bacon pasta salad
- bbq meatballs, cheesy zucchini crisps
- hamburgers, grilled veggies, deviled eggs
- cheeseburger zucchini boats
Quick Meals/Snacks
- leftovers
- pb&j, fresh fruit and veggies with dip

I’m glad we are not the only ones doing 2-a-days. This is our first year in high school football. I thought my son was joking when he said he had practice twice a day! Luckily I found someone to trade rides with and didn’t have to do the early am run.
Your week looks delicious! I am so happy you relinked the cinnamon buns I was looking all over for those and could not for the life of me recall where I had seen them YAY–
that Chicken bacon salad looks SOO yummo to
My son is still finishing up baseball season with the town and next week on Monday he starts 2-a-days for football. It is never ending!
Summer is coming to a close.
Another great and yummy week:-)
Awesome, as always! My 15 DS made your beef & chicken fajitas last Fri. for dinner, they were great! Mmm, okra, that sounds good.

Nice menu. Thanks for the peanut butter oatmeal recipe. My son loves oatmeal and peanut butter so maybe he’ll enjoy this. Have a great week.
I think I will come to your house this week. YUM. Hope to see you at Crock Pot Wednesdays on diningwithdebbie.blogspot.com this week. Thanks for posting. Debbie
