
I may fall flat on my face with this whole “planning all three meals” thing for the summer, but… well… it wouldn’t be the first time and it certainly won’t be the last! Here goes -
Sunday
- scrambled eggs, whole wheat cinnamon raisin biscuits, oranges
- clean out the fridge
- impromptu gathering at my parents’ – I took cheesy potato casserole and apple crisp.
Monday
- banana pancakes, apples
- cookout at the in-laws - I’m taking hot dogs, deviled eggs, brownies and apple crisp (still working on my 20 pound bargain from last week!)
- lentil brown rice casserole (didn’t get to this last week), oranges
Tuesday
- eggs with banana raisin muffins
- pizza pockets, carrot sticks
- yet another graduation cookout (lovin’ these parties!)
Wednesday
- peanut butter banana smoothies, toast
- fried chicken romaine salad
- grilled salmon, potatoes (on the grill), peas
Thursday
- pizza omelet, apples
- leftovers (maybe some grilled salmon on a bed of romaine? will that work?)
- loaded tostadas (going to try this homemade tortilla recipe)
Friday
- breakfast cookies and apples on the way to the state track meet
- sandwiches, snacks at the meet
- clean out the fridge
Saturday
- Hmmm, we may be headed back out to the state track meet, or elsewhere… maybe. That seems quite far away right now. I think I’ll quit while I’m ahead.

Looks great! I’ve been thinking of doing 3 meals for the summer too. Since the kids will be home and bugging me about what is to eat.

Quick and easy!
I’m planning all three meals for summer as well. My 14 year old son is taking care of my 5 year old and it just makes things easier. I’m also working on a daily schedule for them because the 5 year old does much better in a structured environment. Lots of work – I hope I don’t fall flat on my face!

I haven’t had apple crisp in forever! That sounds delicious.
My husband is a teacher and my step-daughter will spend a month with us this summer so I’m planning all three meals, too. I can wing it for B/L with a baby and a toddler, but not so much with two more “big people” around.
Amy, How did the tortillas work out! I’m glad you tried my recipe – it’s a new fav at our house. What kind of flour did you use? I’m excited to try that lentil rice casserole, two items on my “use up soon” list b/c I bought a bunch on sale!
