Menu Plan, Week of 4/20

mpm3 300x151 Menu Plan, Week of 4/20

So, that’s what it feels like to stay up all night and sleep until noon.   I had forgotten!  Lance and I helped sponsor prom in Tiny Town Saturday night.  We surrendered to our weariness at 4:30 this morning.  Thankfully, the kids were with my parents, so we were able to sleep in ’till noon.  Ahhh…

More on prom later this week.  We had a blast!

The spring temperatures are beckoning, and it looks like this will be a great week to be outside, preferably in my (somewhat muddy) garden planting my overgrown seedlings.  They need more space!  I’m hoping to do a lot of meal prep tomorrow so that I don’t have to mess with it much the rest of the week.

Sunday, 4/19

  • Butter Pecan Banana Waffles Oh.  My.  Goodness.  These were sinful. I made them for the first time today when we woke up, mostly because I knew we wouldn’t have to share with the kids.   ;-)    I wasn’t a bit hungry again until 8:00 tonight!
  • grilled steak salad

Weeknight Suppers

  • loaded tostadas – recipe/method coming Tuesday
  • ham sandwiches, chex mix, grapes, cookies to take to the track meet
  • homemade pizza
  • mushroom ravoli alfredo (an experiment), cheese-stuffed garlic breadsticks (another experiment – I’ll let you know how it goes!)
  • Chicken Tortilla Pie

Saturday, 4/25

  • biscuits and gravy, scrambled eggs
  • clean out the fridge
  • popcorn, smoothies

Thanks for sharing the link for the biscuits. I’ve been looking for a good recipe, and I want to try it with the butter and not shortening. I love a good biscuit, or five.

All these years I’ve been making pizza crust, and I’d never come across a recipe for no-rise crust. Thanks for sharing the link. I plan to try it this week: I have homemade pizza on my menu plan, too.

I stocked up on lunch meat recently too to take to games and such. Unfortunately we don’t make it to many of my husband’s games because the kids have other things going on or the games are far away. I am desparately trying to figure a way to get to one of them this season, it really is sad.

Can’t wait to read all about prom! :)

That mushroom ravioli/breadstick experiment sounds awfully delicious to me. I’ll be interested to hear how it all turns out. That’s my kind of food right there!
