Menu Plan ~ Valentine’s Week

It’s good to have a plan… it’s good to have a plan…  That’s what I keep repeating to myself today, as my week flew out of control in the middle of the night, before it even got started!  My father-in-law was in a horrible 4 wheeler accident yesterday afternoon.  As of right now we know that he has 6 broken ribs, a blood clot at his knee, some internal bruising and possible neck ligament issues.  Not good, but it could be so much worse!

So, my plan is to have a plan but prepare for flexibility this week!  I hope to get some extra freezer meals prepared for my in-laws to eat when they get home and also for a friend whose baby is due in a couple weeks.  We shall see how it goes!

Sunday, 2/8

Weeknight Suppers

  • bbq meatballs, cheesy potatoes, green beans ( X3 for my in-laws and preggo friend)
  • sandwiches, fruit, snacks for the ballgame
  • spinach chicken enchiladas (new to me – looks like a great use for the marked down spinach I often find at Dillons!), cornbread, cinnamon applesauce jello salad (recipe coming!)
  • baked spaghetti, corn, homemade french bread (X3 for in-laws and friend)
  • baked potatoes topped with broccoli and cheese, fruit

Happy Valentine’s Day

Valentine Supper

Aussie Chicken (to replicate my favorite all-time restaurant meal)

Garlic Mashed Potatoes (I won’t be making quite the quantity in the recipe)  ;-)

Steamed broccoli (fresh for the kids, with ranch dip)

Chocolate Peanut Butter Brownie Triffle (new to me, but how can it be anything but delicious?!?)

    oh thank you… this week my brain is fried, and it was sooo nice to see your lovely menu – and i was saved from having to think anymore… i never really pay attention to menus people make, b/c that requires processing what food they listed w/ what i have at home, but something struck this week and i was relieved to see your delicious and fun menu, and luckily i have most things on hand – you just organized it for me :)
