Wednesday will be a big day in my kitchen as I prepare a Mexican Fiesta for the basketball team. Otherwise, we’re still in the middle of basketball tournament month, so some of our meals will revolve around trips to the gym. Here’s what we’re eating this week:
Sunday, January 18
- scrambled eggs with ham, cinnamon rolls
- chili Frito pie, apples
- Nephew’s Birthday Party: hamburgers and bratwurst, pasta salad, cheesy potatoes, fruit tray and chips, cake and ice cream
Weeknight Suppers
- homemade pizza using Sherry’s crust – going to try it again after this mishap. I believe I’ll let the dough rise in a metal bowl this time, just in case
- cheesy potato soup, fruit, bread
- Mexican Fiesta: Beef-topped bean enchiladas, chicken tortilla casserole, lettuce and tomatoes, sweet corn, a super-unhealthy but oh-so-yummy cheese dip with tortilla chips, Skor cake and a awesome-sounding Pepsi dessert that Kate shared with me this weekend. I’ll try to share some recipes (especially the Skor cake, YUM) as I get pictures taken.
- pork loin, sweet potato fries (I’ve never made these, but thought it might be a good way to get the family to eat sweet potatoes — any recipes out there?)
- leftovers
Saturday, January 24
- waffles, eggs, bacon
- black bean tostadas, smoothies
- clean out the fridge

Yum! I love this chili frito pie concept. I think my boys would actually eat chili that way
Sweet potato fries…thinly slice, sprinkle with some oil, canola or vegetable, in a bowl. I’d add some cinnamon and little salt. Mix it all around. Cook em like oven fries
I’d love to have the recipe for Chili Frito pie! Now that the Steelers have won, we have finalized our party…and I’d love to make that! Sounds like good football party food!
CountryMama ~ You’re so right! Chili Frito Pie is perfect football food. You might want to do it buffet style. Set out a pot of your favorite chili, corn chips, shredded cheddar cheese, lettuce, tomato and sour cream. Your guests can build their own. I like to put my chili in the bowl first, then top with fritos and cheese… it doesn’t get as soggy as quickly that way… but lots of people start with the chips, then chili, then other toppings. Have fun with it! Go Steelers!
