holidaympm 1 Menu Plan Monday   Bring on the Veggies!

After a solid week of Christmas celebrations and indulging in all the not-so-nutritious-but-oh-so-yummy fare that comes with such events, we are feeling a little out of sorts.  To remedy the Holiday Treat Hangover, I’ve tried to infuse lots of fruits and veggies into this week’s menu.  And you know what?  One of my kids’ favorite foods just so happens to be fresh veggies with dip.  Easy.  Nutritious.  Why don’t I do this more often?

Planning all three meals again because everyone is still home.  Yea!

Sunday, 12/28

  • scrambled eggs with ham and cheese, cinnamon rolls (that recipe, substituting 4 cups of wheat flour for white), oranges
  • 15 bean soup
  • grilled cheese, apples, homemade summer sausage (awesome Christmas gift from friends!), cheese, crackers

Monday, 12/29

Tuesday, 12/30

  • blueberry pancakes
  • ham or roast beef sandwiches, peaches from freezer
  • ham and potato soup (new recipe), fruit and veggies with dip

Wednesday, 12/31

  • eggs, toast, smoothies
  • leftovers
  • veggie tray, apples and dip, tortilla rollups (yummy recipe I’ll share this week), summer sausage with cheese and crackers (company here, I think my sister-in-law is bringing cheesy hamburger Rotel chip dip with tortilla chips)

Thursday, 1/1/2009  Happy New Year!

  • granola or oatmeal, smoothies
  • homemade chicken nuggets and fries, fruit and veggies
  • chicken pot pie

Friday, 1/2

  • scrambled eggs, biscuits
  • clean out the fridge
  • veggie beef soup, homemade bread

Ha – we’re thinking the same thing (stop the sugar, bring in the veggies and fruit)! Happy 2009.

Yum! I’d love to have some meals at your place this week. :) I really do have to try making my cinnamon rolls with wheat flour one of these days… I’m so afraid they’ll turn out “heavy”…

I thought that ham and potato soup sounded good. I think it’ll be on my menu next week! Great menu!

I’m with you on having had enough of the sugary stuff. I too am trying to indulge in veggie & fruits this week.

Sounds like a great menu! My kids are dippers! They will eat most anything if I give them something to dip it in! Have a great week!
