Menu Plan Monday 11/10 {Sideline Sausage Soup}

Sunday, 11/9

  • biscuits and gravy, scrambled eggs
  • We feasted on an awesome birthday lunch for my nephew at his house.  My sister-in-law fixed bbq meatballs, twice baked potatoes, broccoli cauliflower salad, corn, applesauce, and (of course) cake and ice cream.  What a treat!
  • Sideline Sausage Soup As I was flying through Dillons on our way home from the birthday party, hungry husband and children in tow, I was so very thankful that I had taken the time to throw this soup together in the crockpot before we left earlier today!  Supper was waiting… (scroll down for recipe)

Weeknight Suppers

  • taco lasagna with lettuce, tomatoes, and sour cream, corn
  • I’m hosting a holiday open house tonight, so I’ll probably pack a sack lunch for Lance and the kids to eat wherever they decide to go for the evening.  And hey — if you’re in the central Kansas area tonight, (and you’re not an ax murderer!) you’re invited!
  • Tex-Mex potatoes I know we just had these last week, but Lance is out of town tonight and the kids LOVE these, and they’re ridiculously easy to make, and… ’nuff said.
  • BBQ beef ribs, cheesy potatoes, green beans
  • broccoli cheese soup, pumpkin butterscotch muffins, apples and dip

Saturday, 11/15

  • I don’t know what Daddy will fix, but I’ll be in bed… sleeping in on my birthday!
  • clean out the fridge
  • Lance’s cousin’s wedding dinner

Shew!  What a week!  Here’s the promised soup recipe.

Sideline Sausage Soup

  • 16 oz. cooked smoked sausage, halved and sliced thin
  • 1 can each black, great northern and red kidney beans, drained (I used more than this, and cooked dry beans)
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 can chicken broth (I used 3 cups, made with bouillon)
  • 1/2 tsp. each dried oregano, ground cumin and salt

Combine all ingredients in a large saucepan.  Bring to a boil.  Reduce heat, cover and simmer 15 minutes.  OR, dump everything in the crockpot and let it simmer on low all day.  YUM!  The sausage in this soup makes it so flavorful and hearty, it would be easy to stretch the recipe with more beans and tomatoes and chicken broth.

    I want to come to your open house. I’ll have to leave really early in the morning though, so I’d probably be too tired by the time I got there to be much fun. I guess I’ll just have to wait for another time.

    Your week sounds so good and fall-ish. I forgot all about your tex-mex potatoes. I really want to try them this week. I may have to see what I can shift around so that I can make them.

  7. My husband loves Biscuits and Gravy! He usually loves to order it when we eat out. I’ve never found a recipe to make at home.

  13. We made this soup last night and it turned out great! Amazingly, my four year old liked it and he usually won’t eat beans.
