I love Christmas, and I thoroughly enjoy a nice break from routine, but… Yay for a new week! Yay for a new year! Yay for routine! Yay for meal planning! I’m ready for some normalcy, can you tell? Here’s what we’re eating this week.
Sunday, 1/4
- scrambled eggs, banana strawberry smoothies
- chicken parmesan fingers over garlic spaghetti (New-to-me today. It was delicious – thanks, Kate! – but a little spicy for my young ones. Next time I’ll cut the spice and I won’t serve it with quite so much sauce. My sauce overwhelmed my garlic spaghetti, which was a sad, sad thing for this garlic-lovin’ mama!) lettuce salad, homemade french bread
- popcorn, apples, cheese
To Do: make granola and Amish baked oatmeal
Monday, 1/5
- granola or oatmeal
- veggie beef soup, homemade bread
Tuesday, 1/6
- french toast
- basketball game; Lance’s team plays at my home town! I’ll take turkey sandwiches, appetizer crackers (recipe coming soon), apples, and some M&Ms and then I’m sure Papa Bo and Grandma Jean will find their way to the concession stand with one or more of the children throughout the evening. They won’t go hungry, I’m certain.
Wednesday, 1/7
- granola or oatmeal
- bbq beef ribs, cheesy potatoes, sugar snap peas
Thursday, 1/8
- scrambled eggs and toast
- chicken and black bean taco filling (probably made into enchiladas)
Friday, 1/9
- smoothies and toast
- Game night again. We might eat some leftovers before game time, and I’ll pack snacks to take along.
Saturday, 1/10 (Lance is gone all day for a football meeting. My plans with the kids are up in the air.)
- banana pancakes
- clean out the fridge
- popcorn, apples, smoothies

Your menu sounds really good this week. I have bookmarked the recipe for the Chicken Parmesan Fingers over Garlic Spaghetti. That sounds so delicious.
