Menu Plan – January 12

Another busy week of games awaits.  Actually, in January we have three basketball tournaments; three weeks straight of at least three games during the week.  Even if the kids and I don’t go to all of them (and we don’t!) my menu revolves around game nights.  I don’t feel much like fixing chicken fried steak if daddy’s not here to enjoy it with us!

Here’s what we’re eating this week.

Sunday, 1/11

  • granola or oatmeal
  • fried chicken dinner, courtesy of my mom, to celebrate my niece’s first birthday (fried chicken, mashed potatoes and gravy, sweet corn, whole grain bread, spinach salad, jello salad, cake and ice cream)
  • the kids were so excited to see cereal in our house that I let them eat some for supper (NOT the Froot Loops!)  Lance and I had leftover chicken and black bean taco filling with chips.

Weeknight Suppers

Saturday, 1/17

  • blueberry pancakes, eggs
  • chicken fried steak, mashed potatoes and gravy, green beans
  • leftovers, clean out the fridge

  1. Yeah, I don’t like to cook big meals when Matt’s not home either. It just doesn’t feel as worth it. Hope you survive all the tourneys!

    Hmm, think I’m going to have to snack that pizza crust recipe for my fajita pizza this week. And those cinnamon rolls sound (and look) delicious. I think they’ll be my next weekend big breakfast.

    Yummy looking menu!! My dh and kids absolutely love chicken fried steak! I don’t make it often though, because it takes a lot to get the whole meal together and also to make it seem more special. :D

    Your menu this weeks sounds really good. I am bookmarking the one pot ham recipe. My family loves ham, and this will go over really well with my family. I have never tried Chicken Fried Steak, but it sounds really simple and really good.
