One of my favorite things about being a stay-at-home mom is that I’m home. Almost always. And I love it!
This week? I’m Home? Notsomuch.
We’ve got Vacation Bible school each morning. I’m teaching, so my whole “productive morning” system gets thrown out the window. Then, we’ve got ballgames Monday and Wednesday evenings, ball practice Tuesday evening, and an all-star game to attend Saturday. Toss in a couple afternoons at the city pool (it is summer, after all) and I’m starting to wonder… when will I get my laundry done? When will I bake my bread? When will I write blog posts? When?!
If it’s quiet around here this week, now you know why.
Meals are going to have to be fast, easy, and flexible this week. Even if it all falls apart (which wouldn’t surprise me a bit) I still think it’s better to have a falling apart plan than no plan at all! Here goes:
Breakfasts
- lazy granola or cereal (desperate times call for desperate measures)
- eggs and toast or banana muffins
- french toast
Lunches
- steak and/or grilled chicken salad (we grilled tonight; I sliced the leftover meat thin so we could toss it on top of a bed of greens with hard boiled eggs), apples
- steak and/or grilled chicken wraps, peanut butter banana smoothies
- sandwiches (ham and cheese, pb&j, grilled cheese) with veggies and dill dip, fresh fruit
Suppers
- spaghetti, french bread, salad, green beans or corn
- taco potatoes
And that’s all I got. Fresh outta steam. Surely something will come to me before we go hungry?! Suggestions welcome!

I’m thinking of changing our oven meals to lunches, so it won’t be so hot in here and hard to cool down in the evening. ALso might try doing some more crockpot cooking.
I can do that in the summer, when DH is home. But with harvest coming up, I don’t ever know WHEN he’ll be home… that’s my struggle right now. (Speaking of harvest — we need to chat. We’ll probably be cutting next week!)
Really. Truly. Honestly. ONE of these days I’m gonna start meal-planning! Looks great; can I just come over to your house so I don’t have to plan my own family’s meals?
I always try to make a plan… it’s the follow-through that gets me sometimes!
Weeks like that wear me out! We just had a weekend like that… whew!
You could always do what my grandma did every Saturday night… serve up a tray of sweet rolls (she made caramel rolls and cinnamon rolls- always had some in the freezer) with cold cuts and cheese and fruit. One big serving platter. We loved it! Some of my favorite memories.
That WOULD be a great excuse to make some cinnamon rolls! Like I need an excuse…
Just your small menu plan is wonderful. I am working on getting motivated for that. Seems like everyday I am always thinking, “Hm, what’s for dinner?” I am so ready for my kids to be out of school! I hope we slow down after that. School ends this Thursday for us.
Slow down? I think I’m BUSIER now that schools out. Crazy.
Our week is chaos too…here are our “plans” for the week:
spaghetti, ham fried rice (leftover rice), home-made sub sandwiches with whatever is in the fridge, and creamy chicken enchiladas (super easy, lots of leftovers, and freeze fabulously) on the one night we are “home”.
LOVE the idea above of sweet rolls and cold cuts and cheese/fruit. My favorite European meal is french bread with balsamic vinegar dipping “sauce”, cheese, and apples. Extremely filling (especially on a hot summer day).
Mmmm, the chicken enchiladas sound yummy. It’s been awhile since we’ve had those.
SO what is your productive morning routine? Today was the first day of my husband working days (we’ve been swing shift since our dating months). I was not just a little overwhelmed this AM all alone with my 3 year old and almost 1 year old.
My thing is, if I don’t get it done in the morning… it might not get done! My kids are 7, almost 5 and almost 3, so that’s a bit different than yours, but I try to start laundry, clean the kitchen, and do my “big” chores (bathroom, baking, etc.) in the mornings. Otherwise, the day gets away from us and all of a sudden it’s time to fix supper and I’ve got nothing done!
I love using leftover grilled meet for salads, tacos, etc. the next day. Good luck teaching!
