Meatless Meals

With the season of Lent just around the corner, I thought I’d join Faith and Family as they gather a collection of tasty meatless meals from around the blogosphere.  In addition to the sacrifice it represents, eating vegetarian once a week is also both a healthy and frugal option.

Breakfast for supper always comes to mind during Lent. Scrambled eggs are the perfect protein to serve with any of the following:

Another easy meatless meal is Mexican food. Fruit smoothies make a nice accompaniment.

Other ideas:

  • meatless pasta dishes
  • cheesy potato soup with muffins or cinnamon rolls
  • baked fish and homemade macaroni
  • tuna casserole with peas
  • baked potatoes topped with broccoli and cheese

I try to keep our meals pretty basic during the Fridays of Lent.  It doesn’t seem like much of a sacrifice to serve a fancy, expensive seafood dish, when other more frugal meatless options are available.  What are your favorite meatless meals?

We love egg sandwiches, cheese lasagna, cheese quesadillas, and hot & sour peanut noodles during Lent. Oh! And also garlicky clams linguine. :) One of my favorite Lent memories was during the Easter season after my daughter was born when we lived at the Ronald McDonald House. A Methodist congregation brought dinner in (Methodists do not do meatless Fridays in general) and they brought a big pan of meaty lasagna. But they also brought a small meatless pan in case there were any Catholics staying there. That touched my heart so deeply!

How is it possible that Lent begins next week?! I’m glad you posted this. I’m going to have to think. We almost always have homemade pizza with either just cheese or black olives. I also will also buy a box of frozen fish sticks for my husband and kids at least once during Lent. :) Bean and cheese burritoes work well, too.

One of my favorite Lent meals growing up was cheese frenchies. If you’ve not heard of them, it’s basically a cheese sandwich dipped in egg then cornflake crumbs and deep fried. (And therein is the reason we only had them during Lent, I guess . . .)

If you’re adventurous, serve them with onion rings and if you didn’t give up chocolate or ice cream, I suggest a chocolate shake (or malt if you go that way). My Irish college roommate loved potato cakes.

Amy, on a side note, I’ve almost lost track but we’re something like 8/8 for naps! Putting her down earlier seems to be the ticket – YEAH!

Homemade cheese pizza is great for Fridays! I also like Indian-spicy lentils with rice.

I have to admit — we get in the habit of eating cheese pizza and breadsticks on Fridays during Lent.

an easy favorite is just rice, black beans, rotel, and a can of corn. i cook the rice till its almost done, then add the other three just long enough to get them heated up.

We do this year-round at our house. We do a weekly breakfast for dinner night, and a bean recipe night too.

I love the idea of using black beans in your Mexican dishes..I usually go with whole pintos or refried beans. I’ll have to give it a whirl!
