Loaded Tostadas

Black bean tostadas assemble quickly and taste great for a light lunch or meatless meal, but for a hearty spring or summer supper we like to load ‘em up!

A fun, filling alternative to the wimpy taco, this meal has the makings of a do-it-yourself buffet and is a great way for even my littles to help prepare their own supper.

Loaded Tostadas

  • oil
  • tortillas (I normally use flour tortillas, but tonight we used corn.  Both work great!)
  • taco seasoning
  • ground beef
  • onion
  • refried beans
  • black beans
  • cooked rice
  • lettuce
  • tomatoes
  • shredded cheddar or Mexican blend cheese
  • taco sauce or salsa
  • sour cream

Brown hamburger with onion.  Add taco seasoning and cook according to package directions.  Heat oil in a heavy skillet.  Fry tortillas in oil, about 20 seconds on each side.  Drain on a paper towel.  Load the tortilla with your favorite toppings!

Tip: We like to mix the refried beans and taco meat together to eliminate an assembly step and to help stretch the meat. If you keep them separate, spread the beans on before the meat. Much easier to spread that way.

Other tasty toppings:

  • sliced olives
  • guacamole
  • sliced green onions

Ok, I have to tell you, I LOVE tostadas, but have trouble finding the shells to make them with. I love your idea of frying them like a puffy taco. Great!

This is making me so hungry, Amy!! I love refried beans – in fact I enjoy them just as much as meat ones. I love guacamole too. Avos are one of my favourite foods!

The tostadas look yummy. I also love anything mexican food. I like them with beans and cheese, shredded lettuce and salsa. Mexican rice on the side a meal.
