Lemon Bars

Lemon bars absolutely sing spring!  The citrus awakens your taste buds, while the rich buttery crust satisfies all dessert cravings.  Simple enough for an after-supper treat at home, these are also pretty enough for a spring bridal shower, baby shower, or tea party.  Enjoy!

Lemon Bars

Crust:

  • 1 c. softened butter
  • 2 c. flour
  • 1/2 c. powdered sugar
  • pinch of salt

Mix sugar, salt, and flour.  Cut in butter.  Press into an 8×12 pan.  (9×13 will work, too, you’ll just have thinner bars)  Bake at 350° for 20 minutes.

Filling:

  • 4 eggs
  • 2 c. sugar
  • 6 T. flour
  • 6 T. lemon juice

Mix together while crust is baking.  Pour onto hot crust.  Bake an additional 25 minutes.  When cool, sprinkle with powdered sugar.  Store in refrigerator.

** These bars freeze nicely!

Question:

Do you use fresh lemon for this recipe, or would the bottled “RealLemon” work? I have the bottled on hand and would love to give this a try.

I made your lemon bars this afternoon. They were so simple and absolutely delicious! Not as tart as the boxed mixes, actually just the perfect amount of sweet, even before I added the powdered sugar to the top. Thanks! This one is definitely being added to my list of favorites – along with your strawberry pretzel salad, that was great too.

Thank you for another winner recipe! I made the lemon bars for a church get-together and they were a big hit! So simple and delicious. The recipe has already made it into my “keepers” file.

I made these this morning and they are SO good! I used fresh lemon juice just because thats what I had. I also zested some lemon over the top after the powdered sugar because I thought it was pretty and I’m in love with lemon, lol!

I made these in my food processor and they’re in the oven as I type this. The smell is heavenly. I made them in a new cast iron pan….wish me luck :)
