Layered Lemon Delight is the springtime sister to our favorite fall and winter Layered Chocolate Pie Dessert. It’s a sweet tart surprise wrapped up in layers of cream cheese and whipped cream. My family prefers it over lemon meringue pie!
And this, dear readers, is why you don’t see professional Pinterest pictures on the Finer Things blog. We’ll just stick with tasty, easy to make food, okay?
Layered Lemon Delight
First Layer ~ Crust:
- 2 cups unbleached flour
- ¾ cup butter (softened)
- ½ cup chopped walnuts or pecans
Mix flour, butter, and chopped walnuts or pecans. Mixture will be crumbly. Press into the bottom of a 9×13 pan. Bake 20 minutes at 350°. Cool completely.
Second Layer ~ Filling:
- 8 ounces cream cheese (room temperature)
- 1 cup powdered sugar
- 2 cups whipped cream
Mix cream cheese, powdered sugar, and whipped cream. Spread over cooled crust.
Third Layer ~ Pudding:
- 3-4 cups of lemon pudding. Use homemade, cook & serve, or even instant. I won’t tell! For an extra lemony kick I like to add a few drops of lemon essential oil.
Spread pudding over cream cheese layer.
Fourth Layer ~ Topping:
- 4 cups whipped cream
- (optional) chopped nuts, grated lemon peel, tiny lemon candies, chopped lemon drops
Spread whipped cream over pudding. Sprinkle your choice of nuts or candy on top. Refrigerate until serving.
