Frozen Fruit Salad

Light, refreshing, and cold.  Sounds perfect for this time of year, right?  It is!  Like the Strawberry Pretzel Salad, I think of Frozen Fruit Salad as more of a dessert that masquerades as “health food” just because it contains some fruit.  Whatever. It’s tasty!  (And pretty!)

Frozen Fruit Salad

  • 8 oz. package cream cheese, softened
  • 3/4 cup white sugar
  • 2 mashed bananas
  • 1 (10 oz.) package frozen strawberries with juice
  • 1 small can crushed pineapple OR pineapple tidbits (drained)
  • 1/2 c. walnuts (optional)
  • 1 large carton whipped topping

Combine cream cheese and sugar.  Add bananas, strawberries, pineapple, and walnuts.  Mix well.  Fold in whipped topping.  Spread into a 9×13 dish or a large loaf pan.  Freeze for several hours or overnight.

***  I haven’t tried, but I’m betting fresh strawberries would work just fine.  Maybe use the pineapple juice instead of the sugary strawberry juice?

*** I’ve used the small carton of whipped topping before.  Didn’t hurt a thing.  This recipe is very forgiving!

What other fruits would fit in well here?  Peaches, maybe?

  1. This looks delicious! It also looks flexible. I would love to try it with some of my raspberries and blackberries.

  2. The pineapple juice might work, but what definitely would work would be to add a bit of sugar to sliced fresh strawberries, stir, and let them sit until they get juicy. Then you’re adding more sugar, of course, but if you’re using whipped topping, you might as well just fall off the wagon entirely. :>)

  6. We make one similar but scoop them into foil muffin tins and freeze them for individual treats. YUM!

    Thanks for the recipe! Made this today and it was awesome. I followed Candi’s advice and froze them in the muffin tins since I knew we wouldn’t eat the entire dessert at once. We ate our fill after dinner and I still have 16 muffin size servings in a freezer bag just waiting for the next time I need a midnight snack!
