Fried Zucchini {Frugal Gardening 101 Update}

If you’re opposed to oil and grease on your veggies, look away now.  I warned you!

Mmmmmm Hmmmmm.  We picked our first zucchini today, and fried that sucker right up for lunch!  Want some?


Fried Zucchini

  • zucchini
  • eggs
  • milk
  • flour
  • salt and pepper
  • oil
  1. Slice zucchini about 1/4 inch thick.
  2. Beat a couple eggs, add a little milk.  Whisk together.
  3. Scoop some flour in a bowl.  Add salt and pepper.  Stir together.
  4. Heat about 1/4 inch oil in a heavy skillet on medium heat.
  5. Dip zucchini in egg, then in flour.
  6. Fry in oil.  Flip.  Fry some more.
  7. Remove from skillet to a paper towel to soak up the oil.
  8. Serve warm.


Certainly not health food, but it’s one of the dishes we most look forward to with our garden produce.

From the looks of things out back, I’ll be picking another 57 zucchini this week (almost). No, I won’t fry them all.  I’ve got lots of zucchini recipes close at hand, though!  Also, the cucumbers are starting to bloom, which is a huge blessing.  So thankful they survived my weed pulling job last week!  We’re about to find out what a couple different mystery plants are, too, and that’s always fun.  😉

  1. That looks so good. Unfortunately, our zucchini plant died while we were out fo town. Thought it was just in need of a major watering but when I went to check it out the whole plant disconnected from the base. I think some buggies got it. Oh well, we got a few zucchini from it.

  2. Ruby Tuesday has a Zucchini burger on their menu now… it is awesome! Just a suggestion for something else you can cook with all that zucchini…

  3. I have several baby zucchinis, but nothing big enough to pick yet. I’m actually a little concerned about them. They don’t seem to be getting any bigger. I’ve a few babies that started to rot out on the ends. Any suggestions for me?

    How big do you let your zucchini get before you pick them? Mine probably aren’t even an 1 inch wide yet.

    • Uh… no suggestions. 🙁 Sorry. Hopefully someone with some real garden knowledge will read this and respond! I try to get to my zucchini before they get too big. Maybe a foot long?

    • Rebekah- I had a couple to start to rot before they were big enough to really pull and I went ahead and pulled and tossed them. I just did a quick google search on when to pick zucchini because I had the same questions you did. As for size, from what I read online you can pick them as the small couple of inches big like the ones that you have and they are considered baby zucchini or you can wait until they are about 6 inches. What I read reccomended pulling them between 5-7 inches I think and said that the larger they get the more seeds they have. I think that whenever you pull them is really fine it’s just your preference.

    I love cooking my zucchini that way too…but instead of flour, I use a mix of bread crumbs and Parmesan cheese, and a little bit of garlic powder too. SO yummy!

  5. Our growing season here is so much later- I’m still just in lettuce mode. 🙂 Looking forward to fried zucchini, though! Yours looks tasty.

  9. I love fried zucchini too, but to avoid so much grease I sometimes dip it in italian dressing and then bread crumbs and bake and it is delicious that way too. I have a zucchini/turkey burger recipe and I also make a great zucchini casserole as well as chocolate zucchini bread for my husband and kids.

  13. I LOVE fried zucchini!! Did you know that you can do the same thing with yellow squash?? It’s yummy, too!
