This semi-homemade cake makes good use of all those fresh summer strawberries we’ve been picking (if you’re lucky) and buying on the cheap (that’d be me). It’s become a much anticipated staple at all of our big family dinners and celebrations.

Fresh Strawberry Sheet Cake
- 1 pkg. white cake mix
- 1 pkg. (3 oz.) strawberry gelatin
- 3/4 c. cooking oil
- 4 eggs
- 1 c. pureed fresh strawberries
Add all ingredients to a large bowl. Mix well. Pour into an 11×15 sheet cake pan. Bake at 350° for 30-40 minutes. Cool completely.
Frosting
- 1/2 c. butter (softened)
- 1 lb. powdered sugar
- 1/4 c. mashed (pureed) strawberries
- 1/2 tsp. vanilla
Beat together butter, powdered sugar, and vanilla. Fold in strawberries. Mix well. Spread over completely cooled cake.
- I made this recipe into cupcakes and garnished each cupcake with a fresh strawberry slice for my daughter’s birthday.
- My mom often scores the sheet cake and places a fresh strawberry slice on each scored piece. Looks so pretty!
- This would be a fantastic treat for a Strawberry Shortcake themed birthday party!

I have been making almost this exact recipe for about 2 years. My Sunday School class asks for it every time we have an event. It’s such a hit. And so easy and delicious.

Oh! Have got to try this one! Strawberry cake is my favorite! I’ll have to try it with a DH yellow cake mix since my daughter has a dairy allergy. Hopefully, it will work fine, too!

OK, I think I may make this for my son’s birthday this weekend! Maybe if I could make the pink turn blue somehow. Do you think if I added food coloring to the strawberry mix it would hurt it? He can’t have a pink cake for his birthday! LOL
LOL — Adding food coloring won’t hurt anything, but you might end up with some funky colors! If you add blue, I’m guessing you’ll get some sort of purplish… What about making them more red? That might work. Then you could just do a white cream cheese frosting or something and stick a strawberry on the top of each cupcake. Or a chocolate-covered strawberry! Yum.
But… that might still be too girly…
You know what, I could go with a dark red and maybe have primary colors accent with the decorations. I could put a blue piece of candy on top (for the kids). That’s a good idea. Thanks!!
