French Breakfast Puffs

Looking for an easy, indulgent treat for breakfast?  French Breakfast Puffs will do it!  I first had these yummy mini-muffins in my classroom, believe it or not.  One of my sixth graders had her mom bring her favorite breakfast for the class to share on her birthday.  Fun!  They’d make a fantastic addition to any bridal or baby shower brunch menu.

French Breakfast Puffs

  • 1/3 cup softened butter
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups sifted flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • pinch of nutmeg
  • 1/2 cup milk

Topping

  • 6 tablespoons melted butter
  • 1/2 cup sugar combined with 1 teaspoon cinnamon

Beat together butter, sugar, and egg.  Sift together flour, baking powder, salt and nutmeg.  Stir in alternately with milk.  Fill greased mini-muffin cups 2/3 full.

Bake until golden brown, 18-22 minutes at 350°

Immediately roll in melted butter and then in sugar/cinnamon mixture.

Makes 2 dozen mini-muffins.

Amy’s Lazy Tips

** I’m not a big sifter, but I do sift the flour for this recipe.  I add the baking powder, salt, and nutmeg separately, then sift in the flour.

** Instead of rolling the whole muffin in butter and then sugar/cinnamon, I simply dip the top in the butter then dip it in the cinnamon/sugar mixture.  Plenty decadent and less mess.

    • Hmmm, I’ve always considered them a “rich, sugary muffin” but I could see where some might taste a cake donut in there.

  11. I made these this am, except I made them full size rather than in mini-form. I used softned butter and made a cinnamon-sugar butter to spread on them rather than coating the top w/melted butter and cinnamon sugar mixture…YUMMY! My three kids (2,4,6) each ate two and were asking for a third…thankfully there was fruit to distract them or I think they would have finished the pan!
