Look what I made yesterday!

Cream Cheese Apple Pie with Caramel Streusel Topping
Other than my chocolate chip cheesecake (that counts, right?) I haven’t made a pie forever. We were due for a special dessert, though, because my kids have been really good helpers lately. That’s how we celebrate around here.
I would so love to share the recipe with all of you, but I kind of made it up as I went with what I had on hand. So… enjoy the process and have fun creating your own!
- I had some homemade apple pie filling (3 cups, I think) from last summer’s bounty taking up space in my freezer. (I know. Tragic.) That’s where I started.
- The filling seemed a little thin, and I knew it wouldn’t fill the pie plate, so I chopped and added two granny smith apples.
- Cream cheese is good in anything, right? I had 1/2 of an opened 8 oz. package in the fridge, so I mixed it in.
- Also found about 1/4 cup of cream cheese apple dip in the fridge. Added it. You know, one of the football boys told me once that that dip would be good in an apple pie. I should save a piece for him!
- One day right before Christmas Lance brought home an unopened container of store bought caramel topping that they didn’t use at a school party. Hmmm… poured 1/2 of it over the top.
- I’m not real good with double crust fruit pies, probably because I’m way intimidated by my mom’s and my sister’s beautiful pies… so I avoid top crust. Decided to go with a streusel topping instead. Flour, sugar, cinnamon and cut in some butter.
