Easy Roasted Veggies with Smoked Sausage

You guys. Raising six kids is no joke. I feel like I’m drowning most days, and there is so very much that just isn’t getting done around here (blog? I have a blog?!) but even in The Busy, and even with the Mom Fog that comes with trying to keep up with all.the.things. in the midst of night after night of 5 hours of broken sleep, we still have to eat.

I’ve used all my best “cook once, eat twice” and other freezer cooking, simplifying, and all manner of Surviving the Crazy techniques these last nine months. I’ve also embraced convenience and compromise. One of my favorite convenience meats is Hillshire Farms Smoked Sausage. It’s so flavorful that I can slice one package and stretch it to feed the whole pack of wolves family. Also, it takes just minutes to prepare with no mess.

One of our new favorite meals is a thrown together Easy Roasted Veggies with Smoked Sausage. So good! I cheated on this one. Dillon’s had their containers of fresh, chopped veggies on Manager’s Special for cheaper than I could buy them (and wash them and chop them) separately, so I happily grabbed the shortcut. Easy Roasted Veggies with Smoked Sausage


Easy Roasted Veggies with Smoked Sausage

6 cups fresh veggies (carrots, cauliflower, broccoli, squash, onions, asparagus, potatoes, etc.)
1 package smoked sausage
2 tablespoons olive oil
1 tablespoon Italian Seasoning
1 teaspoon sea salt
1/2 teaspoon pepper
cooked rice

Preheat oven to 450°. Spread chopped veggies in a baking sheet. Drizzle oil and sprinkle spices over veggies. Toss to coat.

Roast veggies for 20 minutes. Slice sausage and add to the veggie mixture. Toss until well mixed. Return to the oven and roast for another 20-30 minutes, until carrots and/or potatoes are fork tender. Serve with hot cooked rice.



My kids are usually more the “raw veggies with ranch” type, so I wasn’t sure how this meal was going to go over the first time I made it. My tween liked it so much that she “gave me permission” to fix it over and over again! I think their favorite thing was that there were so many different veggies in the pan that they were able to pick and choose. My favorite thing is that the sausage gives it so much flavor and makes it a super fast one-dish full meal deal. The roasting takes a while, but if you start with pre-cut veggies or prep them ahead of time, then tossing this together is a breeze.

Saucy Summer Squash Skillet is another favorite dish around here using smoked sausage, and I definitely want to try Lynn’s special Grilled Cheese with smoked sausage! Convenience and flavor is where it’s at!

  2. I’m not a big fan of sausage, but my family is! Since I adore roasted veggies, I can see this being a fantastic meal for everyone. LOVE easy, flavorful meals. (And I love manager’s specials that save me time and money! 🙂 )

  3. You can also do this as a stir fry which is how our family usually eats this meal. I slice and brown the meat just a bit with lots of onion, then add any other veggies I have on hand. We prefer the Beef Kielbasa, but any of them would work well. We’ll have to try the roasted version soon as summer will soon be upon us and I don’t think I want the oven on that long! Maybe on the grill??

  4. I love to make a variation of this and throw in butternut squash or sweet potatoes. My family doesn’t LOVE those orange veggies, but if I sneak them in to a dish like this, they don’t mind (as much).

  5. We have 4 total in our family (one child married and moved) and we need 2 of these sausages in our meals, one is not enough. We all love meat and veggies and I like to have enough for my husband’s lunch the next day so we find making more of this is better than not. I also love it in a skillet like stir fry and in the crock pot. It’s very versatile.
