This recipe is the result of having lots of cottage cheese in the fridge (from Manager’s Special deals) that needed to be used up quickly. One can never have too many variations of cheesy potato comfort food. Am I right?
Cottage Cheese Potatoes
- 6 cups peeled, diced potatoes
- 1 cup cottage cheese
- 1 cup sour cream
- 1 cup shredded cheddar cheese (the sharper, the better)
- 1/2 cup diced onion
- 1 Tbsp. dried chives (use fresh if you have them!)
- 1 tsp. salt
- 1/4 tsp. pepper
Cook potatoes in a sauce pan. In a large bowl, combine all other ingredients. Add potatoes and mix thoroughly.
Pour potato mixture into a reased 9×13 dish. Bake uncovered at 350° for 20-30 minutes.
Our other go-to potato dish is Cheesy Potato Casserole, and I have one more to share that my sister-in-law fixed for a recent family dinner. So good!
