Cottage Cheese Potato Casserole

This recipe is the result of having lots of cottage cheese in the fridge (from Manager’s Special deals) that needed to be used up quickly.  One can never have too many variations of cheesy potato comfort food.  Am I right?  ;)

Cottage Cheese Potatoes

  • 6 cups peeled, diced potatoes
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (the sharper, the better)
  • 1/2 cup diced onion
  • 1 Tbsp. dried chives (use fresh if you have them!)
  • 1 tsp. salt
  • 1/4 tsp. pepper

Cook potatoes in a sauce pan.  In a large bowl, combine all other ingredients.  Add potatoes and mix thoroughly.

Pour potato mixture into a reased 9×13 dish.  Bake uncovered at 350° for 20-30 minutes.

Our other go-to potato dish is  Cheesy Potato Casserole, and I have one more to share that my sister-in-law fixed for a recent family dinner.  So good!

How do you like your potatoes?  Are you a casserole comfort fan, or a healthy baked potato fan, or a “Gimme the fries already!” fan? Me?  I love my potatoes nearly any way.  Just depends on what the rest of the meal is.

    I am making this tonight–I like potatoes practically any way, but I get tired of mashed potatoes! I actually prefer sweet potatoes, but I am in a minority in my household!

      Hope they went over well! I’m with your family… the only way I like sweet potatoes is with the brown sugar/pecan topping. :)

        They went over very well! Next time, we are thinking about frying them up rather than baking them.

        As to the sweet potatoes, my family doesn’t like sweet potatoes period! But at least this gives us a different way to make potatoes. Thanks again for the recipe!
