Some may say it’s the commercials, but I think the best thing about the Super bowl is the food! This hearty dip is one we have to portion out, or we’ll eat the whole bowl before halftime.

Corn Salsa
- 2 cans (15 oz.) Mexican corn – drained
- 1 can diced tomatoes with green chilies – drained (Rotel makes an “extra hot” variety if you can handle the spice!)
- 1 c. sour cream
- 1 c. mayo
- 1 T. sugar
- 2 cups shredded cheddar cheese
- sliced green onions or finely chopped regular onions to taste (whatever floats your boat
- corn chip “scoops”
Mix all ingredients together. Refrigerate until serving (I think it tastes better the longer it is refrigerated). Scoop and eat with corn chips.

This is a favorite at our house! I make it so often that I have it memorized. I add a bit of cumin and cayenne pepper to mine for a little kick. I am always asked for the recipe.
Don’t think my kiddos would tolerate the cayenne, but cumin is a great idea!

I have found if you let the cream cheese soften a little and mix it and the ranch together as best as you can first it seems to blend a little better.
This dip goes fast at every function I take it to!! Served with Fritos Scoops
2 8 0z blocks of cream cheese
1 can of Mexican Ro-tel (drained)
1 can of corn (drained)
1 can of black beans (rinsed and drained)
1 package of dry ranch dressing
The black beans sound like a perfect addition. Yum!
Great recipe! Simple & easy. I took some leftovers and added it to a bed of spring mix. Add tortilla strips, and some chicken and it makes a delicious salad! No need for dressing:)
I never thought about making it as a salad. Great idea!
