I have to laugh every time I see a Shepherd’s Pie recipe. This was a staple in our house growing up although we had it with corn. I didn’t care too much for it then – I don’t seem to like anything mixed in with my mashed potatoes. I guess it’s like that whole “floaters” in my drink phobia – yuck! Left home and went to Shepherd College in WV where we had – do you see where I’m going with this? – you guessed it – Shepherd’s Pie once a week. If we had corn and mashed potatoes on Tuesday, we were guaranteed to have Shepherd’s Pie on Wednesday or Thursday! By mid-sophomore year, I was eating cereal for dinner on those nights! I haven’t touched Shepherd’s Pie in 20 years. Maybe it’s time to get over my phobia by trying out some of these variations! Hubby and the kids would probably enjoy it.

My hubby LOVES Shepherds Pie! I brown hamburger with onions and lots of seasonings. Mix with cheesy mashed potatoes and sweet corn and top with cheese! Sooo yummy!
